I've had a craving for thai fish cakes - does anyone have any quick easy recipes that are very yummy? Thanks :chef:

Thai Fish Cakes with Dipping Sauce

Fish Cakes
500gms ling fillets -skin removed and chopped (you can use any firm fish that you prefer - snapper, etc)
2 Tablespoons of Red Curry Paste
1 Tablespoon of Fish Sauce
1 Egg - Lightly beaten
1 Tablespoon of Cornflour
2 Shallots(spring onions) - Finely sliced
4 Kaffir Lime Leaves - spine removed, finely shredded (you can just add a little lime juice if you dont want to use the leaves)
1/2 cup of Vegetable Oil for shallow frying

Dipping Sauce

1/2 cup of White Sugar
1/4 cup of Coconut Vinegar or White Vinegar
1 Tablespoon of Fish Sauce
2 Tablespoons of Sweet Chilli Sauce
2 Tablepoons of chopped Coriander Leaves

In a food processor blend fish, curry paste, fish sauce, egg and cornflour until just combined.
Transfer to a bowl and add shallots and lime leaves.
Shape mixture into balls, flatten out to 1 cm thick.
Heat oil over medium-high heat and fry for approx 1-2 minutes each side of until golden.
Serve with Dipping Sauce.

To make the sauce:
Combine sugar, vinegar and 1/4 water in a pan and bring to the boil. Reduce to low heat and simmer, stirring until sugar has dissolved. Stir in fish and sweet chilli sauce. Cool and add coriander.

(Ive just made a batch with Tinned Tuna and added one grated Zucchini and one Grated Carrot - and its delicious!))

Another easy way to make them:

Mix a can of tuna with some mashed potato. Add some veg if you want (ie can of corn or chopped capsicum, herbs etc)

Dip them in breadcrumbs

Shallow fry
