As the title questions, why when I bake a cheescake from scratch does it always crack??

You may need to adjust the recipe to suit your oven, maybe?
Is the cake coming out still moist , just cracked, or is it dry?
Are you using a conventional or fan-forced oven?

I think it's because it cools too quickly. Do you leave it in the oven to cool with the door left ajar?

:iagree: I find that if I let it cool slowly with the oven off but the door left ajar (rather than taking it straight from a hot oven to the bench) then it doesn't crack :thumbsup:
I usually overcook it slightly though - I am making a big passionfruit baked cheescake for Christmas and must remind myself to turn off the oven when the middle is not yet set.....:o

Yep - leave it in the oven with the door ajar for and hour or 2 before removing it to the bench to cool completely.

Yeeah I leave it in the oven to cool with the door open a little but it seems cracked before it is even ready to cool....
The receipe (kraft website) says 160.... for the oven temp
I have a fanforced oven!!

:yelclap:i normally dont care about the cracks but I'm taking to a friends place this time... It not just for us greedy people here in the house....

If it tastes just as good with the cracks I wouldn't worry about it.
I think it would just look more home made.
You could maybe sent Kraft a email asking them the question, they may come back with some helpful hint on their own recipe.

cheesecakes crack when the mixture has been over beaten... it's hard to get the balance right, but when you work on each stage, stop when it's "just combined" IYKWIM

Well I made the cheesecake and it cracked and it was yummy
*oreo base
*plain middle with chopped up cadbury chocolate sprinkled in it
* Cadbury chocolate sauce poured over the top....mmmmm All homemade....yummmo
I need to stop eating it

I always leave mine in the oven to cool for about 2 mins after i turn off the oven then i take out and put it on the counter and mine never cracks
