Hi All, :xmas::xmastree::reindeer:
Im getting so excited about Christmas!
So am after your tried and tested recipes that have been favs and big hits!
Everything from whoo to go! Including eidible gifts ;)
Ill share these ones:
SEAFOOD SALAD
Seafood extender 1 pk
½ celery sliced thinly
½ kg small prawns pealed (cocktail prawns frozen)
2 tbls mayo
½ carton of sour cream
For the dressing, mix the mayo and sour cream together, it will be a bit thick so you’ll need to add about 2 tbls of water and mix it in. If its still thick add another tbls of water, don’t ad to much otherwise you’ll end up with mayo soup. Then mix in a little salt and pepper. Pour it on and mix it into the salad.
LATTICE SLICE
2 pkt latice biscuits
1 vanilla pudding mix
1/2 cup icing sugar
tab vanilla
Make pudding and add sugar and vanilla
Lay one layer of lattice biscuits shiny side down on lamington tray
Add all the pudding mix, evenly
Lay last layer of biscuits shiny side up
Sprinkle with sifted icing sugar
PUMPKIN SALAD
Baby Spinach (1 pkt)
1 Pumpkin
Bacon Pieces 500g
Chick Peas, 1 can
Marinated feta (peppercorn) 2 blocks or med container
Bake pumpkin in 1 cm cubes, spray with garlic oil spray.
Cover tray with greens then layer the other ingredients.

Here's a good one which I love! :reindeer:
ICE-CREAM CHRISTMAS PUDDING
2 cups mixed dried fruit
100g glace cherries, cut into quarters
50g glace apricots, chopped
50g glace pineapple, chopped
2 tsp finely chopped glace ginger
2 tsp grated orange rind
2 tbsp Grand Marnier
1 tbsp brandy
2 Litres vanilla ice-cream, softened
1/4 cup choc dots
1/2 cup chopped pecan nuts
1. Mix fruits, rind, liqueur and brandy in a medium mixing bowl. Stand uncovered 20 minutes; stirring occasionally.
2. Using a metal spoon, break up icecream in large mixing bowl. Add fruit mixture, choc dots and nuts to icecream; stir until well mixed.
3. Line a 9-cup capacity pudding basin (or bowl) with plastic clingwrap. Spoon in icecream mixture; smooth surface.
Cover with plastic wrap and freeze overnight. To serve, unmould and cut into wedges.:snow:

I know a chocolate log recipe thing.
Packet of Plain choccie biccys, 600ml of Cream- sweetened, line the biccies up, put the cream btween each of them (sandwhich like) coat the outside in cream and refrigerate overnight.
Goes kinda cakey.
Can also add pepermint essence to the cream to make a choc mint log, or use sweetened cream with gingernut biccies for a ginger treat.
Always goes down well and I do the choc mint one add green food colouring and make it look like a caterpillar for the kids.

Hi Mel, I found a recipe for a "Festive Salad" (perfect for Chrissy barbecues). I havent' made it before, but it looks yum, yum! :D It looks so easy to make and very Christmas colourful...
Serves 8-10
1/2 coral lettuce
1/2 butter lettuce
1 cup (150g) chopped snow pea sprouts
1 medium red capsicum, cut into thin strips
1 red onion, sliced thinly
1/3 cup fresh coriander leaves
1 large tomato, chopped
1 orange, segmented
1 avocado, chopped
2 tbsp coarsely chopped roasted macadamia nuts
Macadamia Nut Dressing
2 tbsp macadamia nut oil
2 tbsp olive oil
2 tbsp red wine vinegar
1 tsp seeded mustard
1/2 tsp dried oregano leaves
1/4 tsp cracked black peppercorns
1/2 tsp salt
1. Rinse lettuces; drain well. Tear into bite-sized pieces. Place in large mixing bowl. Add snow pea sprouts, capsicum, onion, coriander and tomato; toss well.
2. Arrange salad on a large serving plate. Just before serving, top with orange segments and avocado; sprinkle with nuts.
3. To make Macadamia Nut Dressing: Place all dressing ingredients in a small jar. Shake vigorously 1 minute or until they are combined. Drizzle dressing over salad just before serving.
Optional: Sprinkle salad with crisp bacon chips, plain or garlic-flavoured croutons, black olives, sundried tomatoes, or capers. :snow:

This (**click here**) (http://aww.ninemsn.com.au/ARTICLE.aspx?id=42167)is the christmas pudding that I have made for the last 2 years, it is absolutely DELICIOUS. It is really quite easy, and all it takes is 6 hours of steaming so on the day you make it you will be house bound for at least 7 hours, but it's all worth it.
Plus, you can make it up to 3 months in advance and store it in the fridge, or 12 months if you freeze it. I made this year's pudding on Monday of last week, it's such a relief to have that sorted out already.
I've tasted a few puddings in my time, and this one has a really traditional christmas pudding taste, I love it.

Rocky Road Icecream
2 Litres Vanilla Icecream
250g Cherries
100g Marshmallows
100g Dark Chocolate,Chopped
100g Silvered Almonds,Toasted
Remove Icecream from freezer,set aside to soften slightly.
Meanwhile,pit and roughly chop cherries.
Cut up marshmallows using kitchen scissors.
Stir the cherries,marshmallows,chocolate and almonds through the icecream until well combined.
Transfer to loaf tin and freeze overnight.
Serve when needed..
Mocha Milkshake
Crushed Ice
1/2 cup chocolate topping
250 ml Baileys Irish Cream Liqueur
4,30ml Espresso Shots
2 Cups Icy cold Milk
2/3 Thickened Cream
Powdered Choc to Serve.
Place crushed ice into serving glasses.
Pour 1 1/2 tbs Chocolate topping in each glass.
Place Baileys, coffee,and milk into a blender and blend until frothy and well combined.
Pour into serving glasses,add a dollop of cream and dust with powdered chocolate..
