My cob loaf admittedly rocks (no bias here :p)

I use 1 tub of sour cream, 1 tub of philly, 1/2 pack of grated cheese, 150 - 200g diced bacon and 1/2 onion finely diced. And a pack of frozen spinach! Melt the philly in the microwave, and combine it with the sour cream. Cook the bacon and onion in the microwave. Stir it into the sour cream/philly mix and add the spinach (drain it well first, squeezing out any excess water). Then mix in the cheese and pop it in the middle of the hollowed out cob loaf. Its my family's new fave.

Just copied and pasted from the Christmas thread (my recipe though :) )

Oh, and pop it in the oven till it browns and is warm in the centre! I usually just wing it TBH!

Mines a bit different

Spinach Dip in a Cob Loaf

(Filling best made a day in advance)

• 1 large cob loaf
• 2 x 250g packets frozen spinach (or 1 fresh bunch, blanched)
• 30g packet spring vegetable soup mix (dry)
• 1 cup mayonnaise
• 1 cup light sour cream
• 4 spring onions, chopped
• 190g can water chestnuts

• Extra baguette loaf as necessary

1. Hollow out the cob loaf (retaining bread in small pieces)
2. Mix all the ingredients together
3. Place mixture in cob loaf and serve with the bread pieces

Yum....now I want some!
