i really feel like carrot cake, does anyone have a recipe, an easy one?

My favourite receipe is made by "You'll Love Coles Carrot and Walnut Cake" :laughing:
Coles do a nice packet mix.
It looks a bit oily while baking but it comes out scrummy.

Sorry I have never made one from scratch though :chef:

The best one I found for a from scratch carrot cake was the Better Homes and Gardens one!!!

it is easy and really yummy.
I don't put the sultanas in but pop some extra carrots and walnuts. (just a personal preference) It is a really moist and yummo cake!!!! I do the icing with a bit of honey and vanilla !

enough build up here is the recipe I use (sans sultanas - if you want to add them I think it was about a 1/2 cup of sultanas - it is on the BHG web site if you want the real recipe)

Ingredients
2 eggs lightly beaten
1 cup raw sugar
1 1/2 cup carrots
3/4 cup vege oil
3/4 cup walnuts
1 1/2 cup SR flour
1 tsp mixed spice (I never seem to have the mixed spice so add some extra cinnamon)
1 tsp cinnamon

Icing - 100g cream cheese (I use the light philly)
3/4 cup icing surgar
squeeze of honey and a splash of vanilla (very exact I know sorry)


Method

1. Preheat oven 180 degrees, oil and baking paper the cake pan or when I do the muffins I pop the patty papers in and give them a squirt with spray oil and they don't stick)
2. Place eggs, sugar, carrot and walnuts in a bowl stir to combine add other ingredients, and stir till moistened.
3. Pour mix into prepared tin and cook for 40-45 mins allow to cool slightly then turn onto a wire rack to cool.
4.Icing- Using electric beaters mix the cream cheese and icing sugar, add honey and vanilla and beat for 2 mins.
