If you are after a variation on the norm of Spinach Rolls I do one with Bok Choy but I sometimes substitute spinach and its just as nice.
Chop one red capsicum, slice 1 onion and julienne 1 large carrot. Stir fry with a small amount of butter (about a tablespoon). Add a handful chopped spinach and stir fry until spinach has just wilted. In another bowl combine cooled veg mix with 1 cup cooked jasmine rice, 1 beaten egg and 1/2 cup parmesan cheese and stir to combine.
Lay out spoonfuls on sheets of puff pastry, roll up and brush with a bit of milk (or you can make several large rolls). Sprinkle with sesame seeds and cook in a moderate oven till pastry begins to brown slightly.
