I have a friend staying with me and she is vegetarian, whereas I love my meat!
I am finding it hard to come up with stuff to make for dinner to accommodate her. Anyone know of any good vego recipes that taste yummy too??

As a quick recipe idea in your local supermarket in the freezer section or the organic cold section you will find quite a few products made by Sanitarium suitable for vegetarians like sausages and patties and nugget type things. They taste yum and go really well with just a plate of steamed vegies!;)
My sis is a vegetarian and she seems to enjoy vegetarian lasagne, vegetarian curry's, vegetarian pasta's, potato bake.. even grilled vegies on the bbq like corn, eggplant, baked potato's etc..
Whenever my mum cooks us all dinner, mum always makes the pasta/lasagne etc separate minus the meat, and then adds it in for us that like!!

Definately Vege Curry!! We have Sweet Potato, Eggplant and Chickpea curry all the time... just made with Panang Curry Paste, Coconut Cream, some Vege stock. Mmmm... it's one of my favourite meals!!
...another favourite is bean burritos or tacos ...just use a can of refried beans (and a can of kidney beans mixed in, if you like) instead of mince.
Vege stirfry with cashew nuts... some soy/honey/cornflour/water to make a sauce.
You could make a Bolognaise... just substitute red lentils for the mince.
Ok, I'm hungry now, might go and cook dinner!
Ooh these are another fav in our household. Obviously you don't have to add the egg if they don't eat egg, which I don't.
Chickpea Marbles
12oz cooked chickpeas
1 tbsp mild curry paste
1 tsp live yoghurt
1 large egg
Food process the chickpeas, add remaining ingredients and blend. Shape into marbles and fry in oil in heavy bottomed pan
Serve with yoghurt and cucumber dressing if desired!;)
As I said works well minus the egg too, just make sure your mix isn't too dry!

In the pasta section of your local supermarket, next to the lasagna sheets there is a box called San Remo Cannelloni Tubes. These boxes have a recipe on the back for Spinach and Ricotta Cannelloni tubes. They are absolutely delicious - I made this originally for a vegetarian friend but this dish is now a regular in our house!! Yummy! Good luck in your search for a vegetarian dish.:chef:

Cheesy potatoes and coleslaw.
A (washed!) baking potato or two per person (depending on size)
Grated cheese (matured / vintage is best)
Light sour cream
chile powder / salt / pepper
Carrots
Green apples
Cabbage
Mayonnaise
Vinegar (preferably cider or white wine)
salt/pepper
Stick the potatoes in a hot oven, just as they are, for 45-60 minutes until they're getting a bit crusty on the outside.
While that's happening, make a dressing with mayonnaise, vinegar and some black pepper. You want it really tangy.
Grate the carrots and apples into the dressing, and finely slice (use the food processor if it has an attachment) the cabbage. Three carrots, two apples and half a cabbage feeds six hungry people easily.
Toss it through, add salt (and anything else it needs) to taste. Bung it it the fridge for now.
The potaoes should be nicely done by now, so scrape aside the apalling mess on the counter, pull the potatoes out of the oven, cut them in half and scoop the middles out into a large bowl. Stand the empty shells up in a baking tray.
Mash the potato, and mix in cheese, sour cream salt/pepper/chile to taste. Don't overdo it - it should still taste like potato, but have a nice soft texture with cheese flavour behind it.
Now spoon the mixture back into the shells, flatten off the tops, and top with a bit more grated cheese. Put them back in the oven until the cheese goes golden brown (half an hour or so)
Serve up on a big platter, with the bowl of coleslaw on the side.
Everyone loves these. Instant party.
I personally have come to like a lighter version: no cheese in the mixture, just a litle sour cream with some chopped fresh chives/coriander/chile.

Have to agree with this!!! I had some vego friends over for dinner on Saturday night and made this and it was a huge hit (even with my carnivore DH!!).
As others have said, I also like to make vegie curries, vegie stirfries, vegie pasta, vegie lasagna.
Here's a recipe for a
Vege Tortilla Stack (kind of like a mexican lasagna):chef:
1 cup of diced red capsicum
1 cup of diced green capsicum
1 small tin of red kidney beans (200g)
1 small tin of corn kernals (200g)
1 tin of diced roma tomatos
1 diced onion
1 sachet of taco seasoning mix
5 tortillas
1 cup of water
half cup of low fat grated tasty cheese
You cook the capsicum, kidney beans, onion, tomatos and corn in a saucepan, adding the seasoning mix and water on medium heat for 10-15mins. Then you take half a cup of the mix and leave to the side. In a oven proof dish, place one tortilla, and then add some of the cooked vegie mix and layer like a lasagna. Once you have used all 5 tortillas, pour the remaining mix over the top, sprinkle with cheese and then bake in a 180 degree oven for 30mins or until the tortillas are cooked and the cheese has melted/browned. It is very tasty!! Hmm yum!!
