Okay, I know it's a bit early, but I'm looking for any sweet Christmas recipes to make - cakes, slices, anything sweet. For us to eat, and to gift as well.
In your post, can you also state whether it can be frozen or not , because I'd like to start freezing things.

RUM BALLS!
1/2 large packet of weet bix (or leftover cake can be mixed in too)
1 can condensed milk
3 tbsp cocoa
1/2 cup dessicated coconut
1/2 cup sultanas soaked in -
2 shots rum (or other alcohol of your choice, bourbon or frangelico are nice too)
extra cocoa for coating, or lots of chocolate sprinkles or chopped nuts
Crush all the weetbix/cake in a large bowl and add all the other ingredients. Mix thoroughly until well combined and texture is sticky and holds together. (if needed add more bix or a touch of liquid, usually extra rum!)
Roll into smallish balls (I like single bite balls, but others prefer 2 bites) Toss into coating of choice.
Store in sealed plastic container in the fridge with a thick layer of coating sprinkled over.
Best if saved for a while to let the flavour meld and mature (If you can wait that long)

I've posted this somewhere else, but this seems more relevent (with 100 of these threads popping up everywhere, i might have to do it again :laughing:)
chocolate christmas pizzas:
you can either buy chocolate to melt down and use, or get the cheaper cooking chocolate, add some copher and a teensie bit of cream
grab either a plate with a bit of a lip on it, or a round baking dish, line with celephane sheets - you want them to be quite large sheets, dont trim them(for this reason the plate is usually easier, you can just lay it on top) and pour in melted chocolate, not deeper then 1cm or so
let the chocolate set most of the way, and just pop a little extra melted chocolate on top after, to make it sticky again
decorate the top with lollies in a slice like design. (similar to a pizza with different flavours for each slice!)
I usually do one slice green mint leaves, one slice jaffas, one slice with coconut, one slice with red frogs, one slice with green frogs, one slice white carob buds, etc, and just keep repeating the pattern with a red green white theme.
let it set, wrap in celephane with a bow, easy!
I go to cheap store and get huge bags of lollies to do it with, so its cheaper.
and other times of the years, i put on musk sticks, freckles, snakes, etc
Rocky road:
you can get marshmellows, mixed party lollies, nuts, and layer them with melted chocolate for your own at home rocky road - i get requests for this now :laughing: i like to use white, dark and milk chocolate, it all swirls together its great!
people like things that are a bit different, and come from the heart. plus, its something they look forward to each year - i have only done the pizzas the last two years, and people are expecting them again this year, give it 10yrs and it'll be a tradition:laughing::laughing:

chocolate truffles (similar to rum balls just no rum)
packet of arrowroot biscuits- crushed
tin condensed milk
1/2 cup cocoa powder
a cup of coconut
mix together, roll teaspoonfuls into balls then roll in extra cocnut or hundreds and thousands.
off cuts of birthday cakes can also be used to make them to, just crumble the cake and add a tin of condesed milk mix, roll into balls and roll in coconut /hundreds and thousands. my kids love them.

Oh I was thinking I should make the German ginger cookies I used to make. I don't have the receipe with me though. You make the pastry and have to let it harden in the fridge before rolling it out and cutting out shapes...will keep an eye out for it.
Also that almond bread that you slice really thinly...forget it's proper name..darn I will be keeping an eye on this thread!!
Oh, those mini plum puds too - you can actually make them with mudcake,(if people don't like fruitcake) orange juice or rum and melted chocolate. roll into balls and when set melt white chocolate over them and add a sliver of red and green glace cherries.
I'll check if there is a thread under 'seasonal'

I like to try new recipes each year, as well some tried and true recipes... fruit mince tarts, shortbread (with different flavours each year - last year was ginger lavender, this year I'm making brown sugar shortbread), and spice cookies are old faithfuls. These all freeze well.
This year, I've decided NOT to do fudge and rum balls, cause they just get left in the fridge and thrown away after six months...
you cant go past white christmas - and it freezes... the pizzas sound very cute! so do the mini pudds!
how about gingerbread people? some people like to hang those on the tree so they might be nice... or how about stained glass window cookies... you make a biscuit dough, roll it out, cut int o festive shapes and cut a smaller shape int he middle and put crushed boiled lollies in the whole. when it cooks, it melts the lollies and they become 'stained glass'
i will be keeping an eye on this thread for more ideas..

My fav recipe for Christmas is SFI Chocolate and Macadamia cookies.
I make a big batch and put some in a container along with a copy of the recipe. It's great for teachers and day care end of year thankyous.
I use dark choc bits instead of while chocolate and my sister has successfully made it with peanuts instead of macadamias.
Chocolate macadamia biscuits
Makes

Ingredients
250g butter, softened
1 cup firmly packed brown sugar
1/2 cup white sugar
2 teaspoons vanilla extract
2 eggs
2 1/2 cups Plain Flour
1 teaspoon baking powder
3/4 cup macadamia nuts, roughly chopped
180g white chocolate, roughly chopped
Method
Preheat oven to 180°C. Line 3 baking trays with baking paper.
Using an electric mixer, beat butter, sugars and vanilla together until light and fluffy. Add eggs, 1 at a time, beating well after each addition.
Sift flour and baking powder over butter mixture. Add nuts and chocolate. Stir with a large metal spoon until well combined.
Drop heaped tablespoonfuls of mixture onto baking trays. Bake, 1 tray at a time, for 12 to 15 minutes or until light golden and firm to the touch (not crisp). Repeat with remaining trays. Stand on trays for 5 minutes. Transfer to a wire rack to cool.

Apricot balls!!
i dont have the exact ammounts of things you need, but you can pretty much just guess and tell if you need more of the wet or dry ingredients.
approx 2 cans of condensed milk
Cashew nuts- a whole pack chopped fine.
Dried apricots- 1 or 2 packs i buy the bigger ones and chop them up as they taste nicer, but can buy the chopped mix to. dried coconut, could add white chocolate drops if you like aswell, or use macadamia nuts and cashews but i just like it with the cashew nuts and apricots.
basically put all the chopped ingredients into a big bowl, add condensed milk and coconut, mix it up! use ur hands get in there hehe!!;) u want like a thick sticky consistancy, you will be able to tell if its to runny, just add some more coconut. then you have some dried coconut on a plate ready to roll the balls in!! very very yummy!!
store them in the fridge. they are alot better after they have been in for a few hours to set. im unsure if you can freeze them or not. but dont think you can.
*WARNING* its hard not to grab one everytime you go to the fridge!!
also this is very simple.. but half choc dipped strawberries look great on a christmas sweets plate.
