The filling calls for 2 Tablespoons of golden syrup, I don't have any.
Can I use brown sugar instead and how much would work well?

shoot, this is theory
i would try using 4 tablespoons, a tiny bit of butter, melt it down before use, that should give you about 2 tablespoons once caramelised
BUT
this is theory, going off random things i have done before. never tried this with caramel slice
yup, good as, but melt it in the tiniest bit of hot water to dissolve the sugar or it will make the caramel grainy.

Needed to cook the caramel a bit more, since it was the first time I had made that recipe it didn't make enough caramel so I did it twice.

to be honest i don't make my own caramel for my caramel slices. either i buy the top n fill caramel or i boil up cans of condensed milk (just don't get the ring pull ones:o)
a favourite of ours at parties - use gingernut bikkies and warm up and press into a patty cake tin to shape. then heat the caramel (top n fill) and mix well to get rid of lumps. put about a tablespoon of caramel into each little bikkie then serve with a bit of whipped cream. so easy and you can make up the bikkies a few days before - just keep in an airtight container and add the caramel as you need too - otherwise people eat them all up:rolleyes:.
