Traditional Shortbread
250g butter
1 teaspoon vanilla essence
1/3 cup castor sugar
2 1/4 cup plain flour
1/4 cup rice flour
Beat butter, essence and sugar in a bowl with electric mixer unil light and fluffy. Stir in sifted flours in 2 batches. Press mixture together firmly. Turn dough onto lightly floured surface, knead 3 minutes.
divide mixture in half, roll each half on greased oven tray until 18cm round, push into shape, pinch edges. Mark 8 wedges on surface of each round, prick with fork. Baken in moderately slow oven for about 1 1/4 hours or until slightly browned. Cool before breaking into wedges.

What sort of slice recipe are you after. I've got Dad's biscuit and slice recipe book in front of me so its go quite a few.

As I said yesterday I have a Caramel Oat slice recipe, which is a little different to the traditional Chocolate Caramel slice..
If you'd like that let me know. :)
ETA; and an easy dessert is meringue nests with berries (defrosted from frozen) with cream. Its easy as and always very popular.

Its even easier if you buy them.
Meringue nests, Frozen mixed berries (or raspberries and blueberries) and cream of your choice, either double dollop thick cream or cream in a can.
Layer it like Meringue, cream, berries, little blob of cream on top and a few more berries and some juice.
They look quite elegant.. :)
