View Full Version : How to make old fashioned Marshmallow?

ok,... so my Nannie used to make these massive squares of homemade marshmallow,..covered in coconut,.....so incredibly yummy!:) But she has passed on:(,..and the recipe has gone,...

does anyone have any idea how to go about making these?

I always thought it was just gelatine, sugar and some vanilla essence beaten together?

i have a recipe for the marshmallow bunny rabbits..is that kind of what your after/?

ill write it anyways lol
i suppose you could use the same ingredients and then make smaller moulds

marshmallow bunny
1.5 Tbsp gelatine
100ml cold water
1 1/4 cups sugar
140ml hot water
colouring
flavouring
coconut

put gelatine and cold water in mixing bowl.
place sugar and hot water in saucepan and bring to boil.
pour over gelatine and stir til dissolved.
beat until thick and white.
add colouring and flavouring.
pour into moulds or tray (greased)
stand til set

Mmmm, my mum used to make the squares covered in coconut too - i'll see if i can find her recipe, and see if it's the same. She used to sometimes put red food colouring in to make them pink too!

Hi darl :wave:,

Here's my tried and true marshmallow recipe.

1 1/2 tablesooons gelatine
1 cup boiling water
2 cups caster sugar
1 teaspoon vanilla
1 teaspoon lemon juice
optional food colouring

Dissolve the gelatine in the boiling water. Pour the dissolved gelatine over the sugar and beat with electric mixer until the sugar is dissolved and the mixture is think and white. Add vanilla, lemon juice and food colouring if desired.

Pour into a greased tin or container to set.

I toast coconut on a tray in the oven and roll the squares through it.

Nope, will go sticky from the sugar, I set mine in a tupperware slice container and keep it on the bench with the lid on. I spray the container with cooking spray and pour it straight in. Be sure that the sugar has been completely beaten to dissolve, dip your finger in and rub two together to feel if there are any grandules left.

A very belated answer: it shouldn't take more than 45 mins to set.

I have mums old slice book here, and it's not in that.....so it must be the womens weekly recipe cards that she has at home........bugger.

I did a search on the AWW recipe site (for marshmallow and coconut) and this is what came up - it is probably close to what she used:

What's white, fluffy and covered in a golden drift of nutty-flavoured toasted coconut? Just the best marshmallows you've ever had the pleasure of eating, that's all! Following this step-by-step recipe, you could make them for sweet eating at home, or even bake a batch for the sweet stall at the local fete.

INGREDIENTS


4 tablespoons gelatine
1 cup cold water
880g (4 cups) sugar
2 cups boiling water
2 teaspoons vanilla
2 teaspoons lemon juice
250g coconut




METHOD


Sprinkle gelatine over cold water. Put sugar and boiling water into large saucepan, stir over low heat until sugar is dissolved, bring to boil. Stir in gelatine mixture. Boil steadily, uncovered, 20 minutes. Allow to cool to lukewarm.

1. Pour mixture into large bowl of electric mixer, add vanilla and lemon juice. Beat on high speed until very thick and white. Pour into two deep 20cm square cake tins which have been rinsed out with cold water. Refrigerate until set.
2. Put coconut in heavy pan. Stir with wooden spoon over moderate heat until coconut is light golden brown. Remove from pan immediately or coconut will continue to cook in heat of pan.
3. Cut marshmallow into squares with wet knife while still in the tin. Lift out with small spatula, toss in toasted coconut. Keep refrigerated.

(you wouldnt believe that DH is an ex chef,..and that we both cater 12course dinner parties - no sweat,...but were defeated by a marshmallow recipe!:laughing::rolleyes:)

Okay, now I completely stuffed it up. It's like jelly underneath (but not as liquidy) and foamy on top? :crying:

:laughing:! thats exactly what I did!!!! I used the last recipe.,....and the trick is to put it in the mixer on high for about 20mins,.. it turns into a mix kinda like merangue (sp?),.. so thick and white that you can spoon it out. You will know when you get there! you pulled it too soon,..(me too!!!)

:laughing: I've been at work all day, I'll make another batch very soon though, when Cobey goes to bed. (Although the fail-mallow batch tastes nice, cobey does like the 'cake')
