can any body tell me a nice carbonara recipe?
i'm don't eat bacon, so either without the bacon or i can just use the same recipe minus the bacon.

this is my version....
boil pasta of choice...in a pan fry onion and bacon or ham and some crushed garlic (optional)...drain pasta but leave in saucepan..add pan mix and stir...in another bowl whisk and egg or two depending on how much there is then add to the pasta and mix thoroughly i leave the pasta on the hotplate but off so the egg will cook in the mixture but not stick or burn...if i have any cream ill add a bit for moisture and some fresh parsley...then serve with parmesan cheese and cracked pepper!!

I've never made carbonara cause i don't eat meat usually either. But i would either do it how Meggs said, and just substitute the bacon pieces with mushroom, or do it more like mac and cheese (ie. a white sauce or cheese sauce and pasta).

hi there!
just leave out the baccon but this is what i do
in a small amount of butter fry of a finely diced small onion and clove of garlic(if you like garlic)
when tender add 2 cups sliced mushrooms a dash of white wine(about 1/4 cup again optional) reduce bu half then add 1/2 cup veg stock or chix stock(well obviously you will use veg) reduce again then add a cup of cream
stir through cooked pasta and just before serving add two well beaten eggs (make sure your pan is turned off or they will scramble!)

cook pasta of your choice, saute musrooms and a red onion and some garlic until soft add other vegies if you like add to pasta with cream grated cheese and salt and pepper to taste also add 1/4 cup of milk and simmer over low heat until cheese is melted, serve in bowls with a little extra cheese grated over top. really yummy

Hey there, you might like to add some "Not Bacon" which is a soy based product if you want to give some extra flavour and crunch to it, just fry it and chop into tiny pieces. Otherwise use some mushrooms.
