Ok I'm sorry to toot my own horn but.................... guess what I just made for my youngest 2 for dinner................... Dairy free, wheat free, soy free vegetable canneloni:smiliedance: Fact is nobody else will appreciate it (in this house) so I going to brag somewhere else and hoep someebody gives me a virtual pat on the back and a thumbs up!! There i just agve myself one, lol. I'm just so sick of trying to find things for the allergic two to eat and even more sick of them not bloody eating it!! I also made allergy free banana pikelets this afternoon which got ditched in favour of Aldi rice crackers:rolleyes: I am too scared to check whether it is being eaten but so far so good been about 10 mins and they are quiet!!!!!!!!!!:smiliedance: Yay me.

made up the recipe myself with left over vegies from our vegis lasgagne, mixed it up in a white sauce (rice milk, nuttelex, gluten free flour) stuffed it in gluten free canneloni shells and poured rest of white sauce over the top and some bottled organic tomato sauce to make sure there was enough liquid and to give some flavour. Low salicylate went out the window but that was in the too hard basket.

Guess what?! DD1 says my ds HAS EATEN IT ALL!!!!!!!!!!!!!!!!!!!!!!!:smiliedance:

You could use a proper recipe for the whit sauce but I used 1 cup of rice milk, 2 big scoops of nuttelex and just sifted in enough cornflour to thicken it up. I had prob 2 big cups of diced pumpkin/sweet potato/carrot/corn and peas. They only gave me 12 fairly small canneloni shells in the box but I layered it in a loaf pan and flipped over the top layer after about 30mins to make sure they were all soft- cooked for another 10 I guess? Sorry not real helpful but hopefully that gives you a general idea!!:D Thanks for your reply though!!
