i have a kilo of beef sauages left over but want to try something new with them
we are over curried snags and braised snags.
so if any of you lovely ladies could throw some ideas my way it would be great

I made sausage pot pies the other night and they were great! Brown the suasages and set aside. Once cool, cut into pieces Then cook some mushrooms - cut up chunky, onions, carrots and garlic until browned. Add a packet of french onion soup mix, stock, tomaat sauce, BBQ sauce, cherry tomatoes, (I used tinned cherry tomatoes) and the sausages and let simmer until sauces is not too runny. Put in oven proof dishes, (I used ramikens, but there is no reason it cannot just go all in one casserole dish instead), and top with some defrosted puff pastry. Brush puff pastry with egg and milk and cook in a preheated moderate oven for about 20 mins, or until the pastry is browned.

ETA - Google 'Sausage Mince recipes' and you will find some ideas on how to squeeze the mince out of the sausages and do a whole new range of recipes!

Actually - I forgot that I put mashed potato in the bottom as I had some leftover in the fridge! Great minds think alike obviously! The 'gravy' from the pie tasted great with the mashed potato...

when you do have some pastry, I squeeze the meat out of the sausages, mix with some mixed herbs then make into mini sausage rolls with some puff pasty, I cut them small for the kids, brush with egg and bake for 15 min or so until golden, they love them. Nice with pork sausages too.

You could so sausage rolls with the insides I do this all the time (easy as but as they are "home made" people think I'm clever shhh) I just use puff pastry sheets cut in half spread each sausage alonf one of the half and roll. You can add cheese chilli sauce mushrooms or whatevers else take your fancy. I often cook up heaps then freeze them and jsut reheat in the oven.

Otherwise I sometimes chuck cut up sausages into pastabake instead of chicken for a change.:D

a fave here is pasta, baked beans, cooked sausage and cheese. cook bits that need cooking, cut sausages into chunks. combine all in a dish, top with more cheese/breadcrumbs if you like things crunchy, bake in oven for a bit.
