HAs anyone got a packet of 'you'll love Coles' desicated coconut??? [Archive]

I'm after a the recipe off the back!!

I had it put aside to copy down, but df must have thrown it out. It was for coconut bread or maybe cake, but pretty sure it was bread.

Coconut Bread

2 1/2 cups SRF - sifted
2 cups desiccated coconut
1 cup caster sugar
1 1/2 tsp ground cinnamon
1 tsp vanilla essence
2 large eggs
165ml can coconut milk
1/2 cup milk
60g butter, melted

Pre-heat oven to 180c / 160 fan forced. Lightly grease and line base of a 14cm x 21cm loaf pan.

Combine dry ingredients in a bowl. Whisk remaining ingredients in a separate bowl and mix into dry ingredients until well combined. Spoon into pan.

Bake for 1 hour or until a skewer inserted into the centre comes out clean. Stand in pan 10mins then turn out and cool on a rack.
