Good morning all.

I have a whole bbq chicken leftover from the weekend. Can somebody please help with a recipe that a fussy husband and kids will eat?

This is yummy :chef: and easy! (I got this receipe from bubhub last year so thanks to whoever originally posted it, it has been a big hit in this house.

Chicken and potato salad.
Mix the following up:

roasted potatoes (cooled)
some bacon
cooked chicken (cooled) (if no cooked chicken on hand, I roast 2 breasts with oil and salt and pepper in the oven with the potatoes)
1/2 a container of sour cream
squirt of mayonaise
mustard to taste (I use about a tablespoon)
something green - chives or parsley.

Chicken and Mushroom Strudel


30g butter
1 Tablespoon olive oil
125g mushrooms - sliced
1 capsicum - chopped (optional)
6 shallots - sliced
2 cups of BBQ chicken (or cooked chopped breasts/thigh fillets)
3/4 cup sour cream
1/2 cup tasty cheese - grated
1/4 cup parmesan cheese - grated
1 Tablespoon parsley
1 teaspoon dijon mustard
salt and pepper to taste
6 sheets Filo pastry (I actually use more - probably double because I love filo pastry!!)

Heat butter and oil in a pan and saute mushrooms and caspicum until tender, add shallots and remove from heat, place in a bowl.
Add chicken, sour cream, cheeses, mustard, parsley and seasonings, mix until well combined.
Take one sheet of filo - brush with oil, place another on top, brush with more oil - continue until all sheets used.
(for lower fat content - only oil every second or third sheet of filo)
Arrange chicken mix alone one long edge of pastry leaving a gap at each edge to tuck in. Roll up like a swiss roll tucking the ends in as you go.
Brush with oil
Put on greased or paper-lined baking tray.
Bake at 180 for 20-25 mins until golden.
Serve with salad or veges.

Stirfry some Veg with some sauces like Soy,honey, garlic, seasame oil, toss in the chicken and serve with noodles or rice....YUMMO

Chop up and put in Fried Rice or Curried Chicken.

Boil up some pasta, chop mushrooms and spring onions and mix through a Pasta Bake sauce with the chicken.

Chicken risotto

Chicken and assorted stuff in rice paper wrappers

The list is endless!!

Really like the idea of the strudel, have you got any other 'flavour' suggestions?

Wow! There a some yummy sounding ideas there (may have to pinch a few myself!).

Mine is pretty boring, Apricot Chicken. We always have a cooked chook in the freezer for a quick dinner.

Mix a packet of french onion soup mix with a little apricot nector to make a paste, add dried apricots, break up chicken and add enough water and nector to cover the lot and bake in the oven.

Our girls love it.

I throw chicken, pesto (couple of tablespoons) grated cheese and some veges into a microwave safe bowl with some cooked pasta throw it in the microwave till the cheese is melty them add some sourcream. Yum not too bad for you esp if you are heavy on the veges and light on the pasta and cheese and use light sourcream.
