I made shish kebabs...Meat/chicken, onion, capsicum and zucchini. I do a marinate of soy sauce, oyster sauce, honey, garlic, sesame oil. You could use pre made marinate,,these are a real winner.

Corn on the cob, sprinkle with herbs, dob of butter and wrap in foil.

I mix chopped tomato, capsicum, zucchini, onion and chilli sauce and stir fry on the BBQ, it goes all sticky and it is soooo yum.

Salads i do a tossed salad, and a homemade potato with bacon, YUM

For the kids i do the little chicken wings from Lenard's. Honey soy ones, i microwave them for 10 min covered with paper towel so the middles cook then chuck them on the BBQ.

Thats about all i can think of at the moment.

Here's a fantastic (& yummy) salad recipe which I love making (& eating:D):

Sweet Chilli & Lime Mixed Vegetable Salad

Salad

200g asparagus, trimmed, chopped coarsely
100g fresh baby corn, sliced lengthways
1 medium red capsicum (200g), sliced thinlt
100g ****ake mushrooms (or I use normal mushy's), sliced thinly
1 lebanese cucumber, seeded & sliced thinly
12 green onions, sliced thinly
100g bean sprouts
1 red thai chilli, sliced thinly
2 tablespoons coriander, finely chopped

Dressing

2 tablespoons lime juice
1 tablespoon sweet chilli sauce
2 teaspoons sesame oil
2 teaspoons fish sauce
1 clove garlic, crushed

Boil, steam or microwave asparagus and corn, seperately until just tender, drain, cool.
Combine asparagus and corn in a large bowl with capsicum, mushrooms, cucumber, onions, sprouts, chilli and coriander.
Place dressing ingredients in screw top jar, shake well. Drizzle salad with dressing and toss gently to combine.

YUM YUM :chef:

Here's a pic I scanned from my recipe book.

Sunday I made a quick marinade with honey and soy sauce (would have been great with some sesame seeds too) and chucked in some tenderloins. I was going to skewer them but had no skewers. :o

They were a pretty big hit.

and here the whole family loves potato salad. I make mine really easily by boiling the potatoes, hard boiling some eggs, chopping up eggs and some spring onion and mixing it all in with Praise whole egg mayonnaise. :)

We do an awsome pasta salad (from the recipe book called "real men do it out doors)

Tomato & Garlic
Pasta Salad

This is a dead easy dish that can be enjoyed either as a main meal or as a side dish for a nice barbequed steak or rissoles.

Preparation: 5-10 minutes
Cook: around 20 minutes
Serves: 4 as a main or 6-8 as a side dish

Ingredients:

250g punnet cherry tomatoes
3 ripe tomatoes cut into chunks
2-3 teaspoons crushed garlic
4 tablespoons olive oil
300g diced rindless bacon (approx 5 rashers)
500g pasta (penne works well - last time we used teddy bears but avoid the triclolured pasta as it doesn't look as pretty)
2 cubed avocados

Brown the bacon in a medium saucepan with the olive oil, adding the garlic about halfway through. Add tomatoes, and simmer over medium heat stirring regularly for about 20 minutes until cherry tomatoes are soft. Season to taste with salt and cracked pepper.

Cook pasta according to packet directions. Once the pasta is drained, stir in tomato mix. Stir through avocado just prior to serving. Can be eaten either hot or cold.

Here's a few salad ideas for you.

Chickpea salad
1 or 2 400g cans of chickpeas, rinsed and drained (depends on how many you are catering for).
2-4 medium roma tomatos chopped coarsely
2 shallots chopped finely
2 tablespoons limejuice
1 cup of coarsely chopped fresh coriander
1 tbsp olive oil
Combine all the ingredients and toss gently!!

Roast Vegie and Couscous Salad
Roast in a moderate oven for 20-30 mins some pumpkin, sweet potato, red capsicum, zucchini, eggplant.

Then cook your couscous - pour in a bowl, add boiling water, some stock and butter and let it sit til the liquid is absorbed, then fluff it up with a fork.

Toss the vegies into the couscous, sprinkle some paprika, ground cumin, ground coriander, toss together gently.

I also like a
Prawn and Avocado Couscous Salad (if you do this, then you can still roast vegies and have them as a salad on their own with some light dressing, and toasted pinenuts!)

You will need
250g couscous
4 shallots trimmed and chopped
1 bunch of coriander chopped
2 ripe tomatos chopped
40 prawns peeled, deveined and halved lengthways
1 large avocado peeled, halved, stone removed and chopped.
Combine all the ingredients and top with the following lime dressing
2 lime rinds finely grated and juice of the limes
1 tbsp honey
salt, pepper
80ml extra virgin olive oil.

my family are big fans of what DD calls 'roll ups' on the bbq.. I either buy schnitzel cuts of meat or pound it flat, roll up with something inside, hold with toothpicks and bbq. DD's current fav is beef rolled with fetta and asparagus or chicken spread with pesto and parmesam cheese.

if you have a hooded bbq I pinched this recipe from better homes and gardens.. it was lovely! and pretty cool to cook it right on the barbie!

http://au.lifestyle.yahoo.com/b/betterhomesgardens/8802/bbq-mudcake/

MAKES: 1 x 22cm cake

300g dark chocolate (see notes below)
200g unsalted butter
6 eggs
2 tsp vanilla extract
200g caster sugar
100g self-raising flour
2 tsp baking powder
300g almond meal
whipped cream and berries, to serve

1 Place the chocolate and butter in a small pot and melt gently over a low heat then set aside. Whisk the eggs, vanilla and sugar until light and creamy. Sift the baking powder and flour together, then stir in the almond meal.2 Fold the egg mixture into the melted chocolate, then fold in the flour mixture.
3 Pour into a greased, lined 22cm solid-base cake tin and set the tin in a roasting pan with 2cm of hot water. Place in the BBQ and cook with all jets on low until the water has evaporated (about 40 minutes), then cook for another 15 minutes. Skewer test to see if the cake is done. Cool in the tin for 10 minutes, then turn out. Serve with whipped cream and berries.

We often have chicken thighs marinated in sweet soy (kecap manis) and minced garlic.

Sliced onion and zuccinni bbq'd together is a nice side dish.

Pieces of mango and avocado are delish through a green salad. Add some cherry toms, cucumber etc

Lamb cutlets are good for the kids.

My fav bbq sides are potato bake and chinese cabbage noodle salad (it is the best salad ever) the recipe is on the back of changs fried noodle packet....

For meat you sould do a satay marinade for chicken skewers or do thick sausages with a prune and slice of bacon wrapped around the outside with a toothpick to hold it soooo yummmy...

Will keep thinking....
