View Full Version : Cheesecake recipe
I'm looking for a no-bake cheesecake recipe. In particular, one that's kind of heavy and dense, iykwim. I want to make one for my hubby and he doesn't like the baked variety, but he also complains when they're too light and fluffy like the cheescake shop's no-bake cakes. I know there are millions of recipes on the net but as I've never made one I don't really know what to look for. Can anybody help me?

Michels Pattiserie..theirs are really dense and yummmm.....
not light at all...
You'll need gelatine, cream cheese, cream, castor sugar, butter and biscuits...
Ones with gelatine are usually the denser ones....thicker consistancy...

I have one that's baked for an hour. I always thought I didn't like cheesecakes but I LOVE this one. I made it for DF cos he loves them so much. Did you want to give it a go? It's not light and fluffy in my opinion but not heavily baked either. Might be worth a shot.
250g plain sweet biscuits
125g butter, melted
500g cream cheese, softened
1 cup caster sugar
2 teaspoons vanilla extract
2 eggs
300g sour cream
1. Preheat oven to 170/150 fan forced. Grease a 6cm deep, 22cm round springform pan.
2. Place biscuits in food processor. Process until fine crumbs. Add butter. Process until combined. Press mixture over base and sides of prepared pan. Refrigerate for 30mins.
3. Beat cream cheese, sugar and vanilla with an electric mixer until smooth. Add eggs, one at a time, beating to combine. Fold in sour cream.
4. Pour into prepared pan. Bake for 1 hour 10 mins or until centre is just firm. Allow to cool in over for 3 hours with door slightly ajar. Refrigerate overnight.
I used a blender rather than a food processor and electric mixer and I didn't leave it in the oven for 3 hours, I just sat it on the cook top and then put it in the fridge overnight.

500g philadelphia cream cheese softened
1/2 cup castor sugar
200g toblerone chocolate
1/2 c of thickened cream
Melt toblerone. Beat philly and sugar until smooth (electric beaters best) Beat in melted toblerone and cream until well mixed.
Set into a standard cheescake biscuit base (marie biscuits with melted butter) although I have been told using chocolate biscuits makes it a bit more yum
Set in fridge for 2-3 hours

My mum makes a super one using
philly cheese
lemon juice
castor sugar
and a tin of crushed pineapple.
It has quite a tang to it and you just set it in the fridge. it has a granita biscuit base.
I dont know the exact mesurements of the ingredients but if you want to know just pm me and i will ring my mum and ask her!

DH's work always asks me to make them cheesecakes lol.

Here’s the recipe for the Cheesecake Brownie…
Base
185g (6 oz) Butter, melted
¼ cup Cocoa Powder, sifted
1 cup Caster Sugar
1 cup Plain Flour, sifted
2 Eggs
Cheesecake
285g (9½ oz) Cream Cheese, softened and chopped
4½ tablespoons Caster Sugar
2 Eggs
Preheat oven to 160°C (325°F).
Place the Butter, Cocoa Powder, Caster Sugar, Flour and Eggs in a bowl and mix well until smooth.
Spoon into a 20cm (8 in) square slice tin lined with non-stick baking paper.
To make cheesecake, process the Cream Cheese, Caster Sugar and Eggs in a food processor until smooth.
Pour the cheesecake mix over the base and swirl base through top with a butter knife.
Bake for 45 - 50 minutes or until set.
Cool in the tin, then cut into Slices. Makes 16 slices.
Jelly Slice One
1 packet Arnott’s Yo Yo biscuits
6 oz (180 gm) margarine
1 packet raspberry jelly
Filling:
1 tin Nestles Sweetened Condensed Milk
Juice of 3 lemons
¼ cup hot water
2 teaspoons gelatin
Melt margarine and mix with crushed Yo Yo biscuits.
Press into dish (lasagna type dish is perfect) Works best if the dish is lined with baking paper
Dissolve gelatin in the hot water and add to Condensed milk and lemon juice.
Beat mixture together and pour over base.
Refrigerate.
Make jelly using 1 ½ cups boiling water (instead of the normal 2 cups)
When the jelly is cool, pour over base, refrigerate and allow to set.
