View Full Version : Rusks like the bought ones

Hi girls,

I've just landed in Canada for the next 6 months with DF and DD 8months and discovered that, along with not being able to get lots of other things, I cannot find hard, unsweetened rusks.

They keep my little girl happy for ages so I'm wondering if anyone knows how to make them? I want to make nice hard ones like the Heinz or Bellamy's ones. All the rusk recipes I've found online are either too soft or have egg to bind them, something without egg would be good.

so far, have only found this one. Am thinking about trying it with rice flour instead of wheat flour (wheat allergy...)

it makes a huge amount but they do keep really well..or you could just scale it down to what seems right.

2kg self raising flour
250 marg
4 cups sour milk ( just add some lemon juice to milk to get the effect)
2 beaten eggs
1/1/2 cups sugar

1.Rub marg into flour.
2.Combine eggs,milk and sugar.
3. Knead together
4. form long cylinders on a tray.
5. Bake 55mins at 180 c
6.cool
7. dry overnight in a very low oven....or just for a few hours.
