View Full Version : Your Ideas... for tonites dinner...
I have bacon - eggs - cheese - tomatoes - frozen vegies (bread crumbs - flour most the basic essentials)
Can you give me an interesting recipe?:chef:
Otherwise we'll just have good old bacon, eggs & toast!

omlettes? or quiche?
I was going to suggest quiche as well with vegies. you could also make a frittata, kind of like a quiche without the crust like a big omelet with heaps of vegies just bound together by the egg and flour. good luck:chef:

I'm having Jamie Oliver for dinner!!:D Well his Chicken & Mushroom pasta bake from his "Jamie's Italy" new cookbook anyway! It has such yummy stuff in it!! My workmate gave it to me as a laugh when my son Oliver was born recently.

Make a shortcrust pastry (I can't remember the proportions offhand it's fat/flour and a little water, you'll need to google), roll it out and line a pie dish with it.
Roughly chop the bacon and tomatoes, toss in the frozen vegies. Throw in some salt, pepper and any herbs you have to hand. Put in the pie dish and pour in a few beaten eggs. You want the egg to come maybe halfway up the mixture - just go by feel, and do what looks right.
Grate a goodly amount of cheese over the top, and stick in a hot oven until the pastry is cooked.
Yum.
some sour cream makes it nice too

As for lactose-free - either go without the cheese (you'd probably want to perk up the flavour a bit more) or use whatever you usually substitute for the stuff.
Some onion / eschalot / chives would be great if you have them, cheese or no.
Hey there,
Did the quiche - even made the pastry!:chef: Wasn't bad at all!
DD 23mth - very fussy eater - ate it all up + a 2nd bit!
This is a girl who doesn't normally eat egg!
Thanks for your motivation!
