Please move if in wrong section. Does anyone have any favourite and yummy and budget conscious meals that they would like to share? We are feeling the pinch with increasing costs of living and would like to cut some costs. Any ideas would be appreciated. WE tend to eat more white meat then red.

I make a really easy tuna and rice dish.I just sort of through everthing in. I dont have measurements.

Cook rice.Make a cheese sauce. You can add some curry powder and salt and pepper if you like. Add the rice to the cheese sauce and throw in a tin of tuna and mix well. You can also add some peas if you like.
Put the whole lot in a cassorole dish and put grated cheese and breadcrumbs on the top. Bake in oven till cheese melts.

Have to think and post some more tomorrow.

I'm not that good at writing down recipes since I'm a "oh that looks about right" sort of cook :-)

but here goes

Pumpkin and lentil soup

One butternut pumpkin
3/4 cup lentils
2 tsp curry powder
vegie stock cube
80ml tin of coconut milk
salt to taste

cut up the pumpkin
cover with water
add lentils,stock and curry powder
simmer for ages
(usually a couple of hours, chez me :) )
add coconut milk
eat

makes ... ummm ... heaps. Freezes well. All quantities subject to experimentation! :cool:

When money is low here the easiest and cheapest thing to do is.....pan fry some chicken or fish, and serve with a salad or some mixed vegies.

The less processed your starting product, the cheaper it is :) :thumbsup:

Also really cheap and nasty is good old spag bol - fry some mince, add a tin of tomato soup, some herbs, garlic. Serve with pasta :) Yum!

The Womans Weekly Casserole book is great as it uses cheaper cuts of meat....best investment I ever made. I'm not very good with specific recipes as I just go with the flow but chops, sausages, chicken wings and drumsticks are all versatile and cheap (er)

Hi

I think any dish could be made cheap if you watch what you buy, like buying all your meat and vegetables from a butcher and vegie shop and not at the supermarket. Not buying pre packaged produce or instant meals.

Anyway a good hardy stew or soup also make a cheaper meal or will feed a mini army.

i am really lazy in the kitchen so i buy a sachet of instant potatoes and a large tin of tuna. follow the directions of the potatoes open tin of tuna drain and mix with potato. then add toast.

a good warm and filling meal for under $5.

but you can use proper potatoes and mash them if you want to.

How many people does that tuna and spud meal feed?

For $3 for the instant spud it's probably a cheaper alternative to buying real ones IYKWIM. They go up and down like a yoyo (not quite as bad as the banana though).

I make a chilli tuna pasta that my kids love!!!

Cook pasta as directed as much as you need.

1 small/medium tin of plain brine tuna
1 small tin of chilli tuna (if not just use sweet chilli sauce instead of tuna)
Place cream in pot with some plain flour and mix over heat until it thickens a little.
Stir in plain drained tuna and some bbq sauce
Stir in half can of chilli tuna (or your chilli sauce)and taste.
If want it a little spicer add more chilli tuna.

Place pasta in bowl and pour over sauce (sprinkle with cheese if desired)

Yummo!!!

yeah, I do a similar thing to the chilli tuna pasta too (sometimes it's chilli tuna rice instead) but I also add in a handful of frozen peas ... sounds wierd, but it works! (well, it helps that dd1 never met a pea she didn't like too :D )
