Brooke, not sure if you want recipes for a pav or choc pudding, the 2 sweet dishes I'd normally do if we're having friends around for dinner or a barbie?
You did say it was for a lot so I'll pass on 2 recipes for things I do for when there are heaps of people. They are finger food desserts and very easy. Also, I always get lots of compliments as to how nice they are, I do feel a bit guilty as they are so easy ;) ! Let me know though if you want recipes for something to serve in a bowl to people.
Choc Mint Rolls
1 pkt Malt biscuits, crushed- (I blitz them in the food processor)
2 tablespoons of cocoa
1 tin of condensed milk
1 pkt of Crown Mints, chopped- (I wrap them in a tea towel and beat them with a meat tenderiser, have heard of people running over them with the car! You need to have really small pieces)
Mix all the ingredients together and roll in to logs. I then roll them in a bit of coconut and leave to set in the fridge. When they are set slice diagonally in to bite size pieces.
Apricot Balls
1 pkt of dried apricots(I think this would be about 250 gms- it's not a huge pkt) finely chopped, I do this in the food processor
1 cup of coconut
1 cup of crushed biscuits, again I do this in food processor
1 tin of condensed milk
Mix all together and form into small, 1 or 2 bite size, balls. Then roll them in coconut. Keep them in the fridge.
