I just use whatever breadmix I have.

Start as for a normal loaf, but put the machine on the dough only setting. (mine takes 1.5 hours)

Sometimes I remove the dough after the first knockdown (about 45 mins to 1 hour) roll out my pizza bases and let them rise in the pan a second time, before putting on the toppings and cooking. It just cuts down the waiting time a bit, the second rise in the pan is not really necessary for a successful pizza base.

Use lots of flour on your dough and benchtop or you will have dough sticking everywhere!

This is our recipe, it makes enough for 2 pizza bases. They turn out really yummy and we have had a lot of postive comments. Even my Mum who isn't a fan of pizza loved it!

Pizza Dough
1 tab castor sugar
2 teas dried yeast or 1 sachet
90ml lukewarm water
3 & 2/3 cups plain flour
1/2 teas salt
3 tab olive oil
125ml lukewarm water, extra

Mix 90ml warm water, sugar & yeast in small bowl, leave in warm place to activate.

Mix flour and and salt in bowl, add the olive oil, 125ml extra water, and yeast mixture. Mix until dough clumps together. Tansfer to lightly floured board and knead for 7-8 minutes, until you have a soft dough.

Set aside to rise in an oiled bowl in a warm place covered with a tea towel for 1 - 1.5 hours until doubled in size.

Punch down dough and divide into 2 portions. Work each portion and roll out to desired size.

Dust pizza tray with cornmeal, and place base on.

* if you are making it in bread maker, your method will probably be slightly different. (the kneading part)
