Does anyone have a really yummy recipe for a creamy potato bake, I would really love to make some for tomorrow. My Mum has been unwell all week and the last thing she wants to do is cook for 15 people (this is normal for Sunday lunch). I don't have a great recipe and it never comes out nice and creamy.

Does anyone have a tried and true recipe they want to share?

Slice your potatos. Layer them in the dish and sprinkle cheese and diced bacon in between each layer. When you have finished all the layers mix thickened cream and french onion soup mix together and por over the potato. Sprinkle with cheese. Bake covered at 180 degrees for around 30 mins then bake uncovered until cheese is golden brown. It looks a bit oily when it comes out but if you let it sit for a few minutes it thickens. Sooo yummy!

mine is similar but I also layer in some onion and just use a box of long life cream, no soup mix

Thanks heaps girls :yelclap:

I have seen ones that use soup in them before but was not sure how it would turn out :o

I'm sure it would be fine to leave the bacon out? As we have a vegetarian in the family

I've never made it myself, but a friend of ours uses both potato and sweet potato for something a bit different - it's VERY tasty :)

I have 2 secret tips #1 is get a clove of garlic, cut it in half and rub the inside of the dish before you start.
Then #2 is McCormacks scalloped potato mix. (green and white packet in supermarket)
Put together McCormacks scollaped potato mix and thickend cream/milk and some crushed garlic together in a bowl.
Layer potato, then onion, then cream mix then grated chese. keep layering and finish with grated chese on top.
Bake for 45 mins
Have had many compliments on this one.

The secret to a good potato bake is lots of cream and a really long slow cook.

This is my recipe. Feel free to leave out the bacon.

Potatoes slice thin on a mandolin. (1 med pot. per person)
2x uht cream
2 slices bacon chopped fine and fried crispy.
Salt, pepper and grated nutmeg.
Butter and grated tasty cheese

Spray the dish with non stick cooking spray.
Layer potatoes and sprinkle with bacon, salt, pepper and nutmeg in each layer. Pour over a small amount of cream between each layer.
Keep building until dish is full or potatoes all used.
Top with remaining cream, dot with butter and sprinkle with cheese.

Bake in a low oven (130c to 150c) for 2 to 3 hours until extremely tender.

THIS IS NOT THE LOW FAT OPTION....

I always add some wholegrain mustard and either some dijon mustard or horseradish in with the cream and lots of garlic. I also use peporoni instead of ham or bacon. Yummo
