I have people coming over for dinner tomorrow night and I have decided to make individual shepherd's pies, but can't think what else to serve it with.

I need some sort of side vegies i guess. Any ideas??

Thats what I was going to say, tops idea.

What about a warm salad, with pumpkin and that sort of stuff. might be different.

Had to laugh tho, you are both from QLD. Being from Melbourne in winter salad is not the first thing that springs to mind. :laughing:

Yeah a warm roast pumpkin and potato salad, with baby spinach, snow pea sprouts and a light mustard dressing...gorgeous....(can also add sweet potato)

and add a few homemade chips, very healthy and very delicious.....:thumbsup:

Yummm, that sounds lovely. May use sweet potato rather than more potato (as there will be heaps of that on top of the pies!!!!!) :chef:

You can just use pumkpin in the salad... all you do is roast the pumpkin in small cubes, dont roast too heavily though or they will just fall apart, then let cool a bit so warm.

In a bowl mix together your baby spinach and snowpea sprouts, then mix through the warm pumpkin just before serving (so you dont wilt the baby spinach) and then dress... I use a premade dressing last time and it still tasted as nice as homemade.. (cant find the homemade recipe for dressing)...

And then have sweet potato chips...thinly sliced and baked little bit of oil..just a little though...or on the bbq...YUMMMMMMM

I think I'm getting my appetite back..lol
