Just wondering about what I can cook tonight - Have got some chicken drumsticks, a couple of tins of diced tomatoes, and just the usual pantry ingredients - Any ideas????
I thought to slow cook some in my electric frypan, but cant work out a good sauce.:)

how about season with a little bit of lemon and garlic, onion and roast them in the oven? Do you have a slow cooker??? Could do them in there with the tomatoes and whatever vegies you want and just leave them.

Lay out your drumsticks, season with salt and pepper, half a lemon squeezed over them. Cut some garlic finely and spread around the base of the baking dish, chop two tins of tomato roughly and a small onion, spread around base (not over chicken) I teaspoon mixed herbs
Pour in a little water into the mix, so you can see there is water at the base, no need to mix. Cook on around 180deg till cooked through turning drumsticks half way through. Pull the drumsticks out and put the sauce in the base of the dish into a blender and mix till pureed. Serve drumsticks with the sauce as a gravy :) Any extra gravy can be used over pasta the next day or for lasagne or something

yeah its alright - the kids love it - it doesn't taste "cokey". DH loves it too but prefers it with boneless chicken but the rest of us think its better with boned chicken like legs. the "sauce" doesn't thicken up - it stays runny, but it's more there just to produce the flavour in the chicken, IYKWIM.

:chef: Caramel Chicken Drumsticks

10 Chicken Drumsticks (with skin removed)
2 Packets of French Onion Soup Mix
1 Can of Coke
Olive Oil
1 tablespoon of Cornflour

Place drumsticks and one packet of the soup mix in a large bowl, roll drumsticks around until completely coated. Brown drumsticks in olive oil in a non-stick pan pr around 10 minutes.Place in large casserole dish.

Mix together can of coke, cornflour and remaining packet of french onion soup (the coke mixture browns into a delicious caramel).

Pour coke and soup mix over chicken drumsticks, and bake for 30-40 mins, or until golden brown!

WARNING: Make sure your oven dish is deep to prevent overflow.
