How do you deep fry without a deep fryer?

Do you need a special saucepan or will a regular one work?

I don't want to buy one specially, as it would end up getting used far too often, I fear.

Use a large heavy bottomed saucepan.
Fill only half full of oil (I've just discovered rice bran oil, heats nice and hot without smoking or degrading and is good for you!)

WATCH IT LIKE A HAWK!

Oil on the stove can be dangerous as it doesn't have a thermostat to control the temperature like a deep fryer.

You can re-use the oil several times. Just wait for it to cool and pour it through a new chux or paper towel into a storage bottle.
