Hi all. Was reading in a grocery thread about homemade snacks. Could we share what it is that we make from scratch?

im also interested - especially snacks that you can pack and take when going out.

I make the cornflake and sultana cookies. They are soooo good.

2 cups of sr flour
250g margarine
1 cup sugar
2 eggs
1 tsp of vanilla
2 cups cornflakes
1 1/5 cups sultanas (or mixed fruit)

Mix all together. Bake at 180 for 10 minutes. Makes about 30

Its as simple as that and the kids love helping to make them. And they are good warm but even better cold. They Last for about 5 days in an air tight containger or freeze well

Vegemite scrolls
Cheese and bacon scones
Vegie sausage rolls

For the vegmite scrolls you need a basic scone dough

Vegemite scrolls
Preheat oven 200 deg, Scone dough rolled out to about 1/2cm thick, spread with vegemite and grated cheese, roll up into a big log and slice about 2inches wide. (you can do thinner) lay out flat on a tray, brush lightly with milk, bake at 200deg for approx 15mins till golden brown. Oh you can put cheese on top if you want too. Yummy hot or cold.

Cheese and bacon scones
Scone dough, while laying out add half a cup of bacon, half a cup of cheese and some herbs just a pinch :) Cut into scones, brush with milk, bake 200deg for apporx 10-15 minutes. You can also top with cheese.

Vegie sausage rolls
Puff pastry
I put in a variety of grated vegetables, mushrooms, garlic, onion, carrots, potato, pumpkin, peas, corn, sweet potato, celery, etc. Mix with an egg combine well and roll the same way as sausage rolls. Brush with egg or milk. Cook till pastry golden brown. *if bubs cant have egg, then throw in a cup of cheese for every 3 cups of vegies, it helps it stick together :)

Quiche, makes own base
5 eggs
1 cup cheese
1 cup bacon
1 cup milk
1 small onion
1 cup sr flour
2 cups of mix vegies of your choice grated or cut fine. (i use carrot, sweet potato, mushies, celery zucchini, tomato, garlic, broccoli, cauli, etc)

Combine well, you can add more vegetables if mix appears to be a little runny otherwise it cooks fine i tend to make it more gluggy and fill it with approx an extra half of cup of vegies, the kids prefer it this way. Spoon into a greased quiche dish or into individual muffin pans. Bake till golden brown at 180 deg. The little ones take approx 15 minutes the large quiche can take around 40 mins.

They sound really good. Do they keep for long?

Hmm mine are gone in two days lol. You would prob get 4 days but you can freeze them too

yep freeze them too just remember to eat them in 24-48 hours

Those recipes sound great punkbaby.

I know its a basic, but what scone recipe do you use?

(3 cups) self-raising flour
80g butter (sit out for a while so its soft and cut into cubes)
1 cup milk
Self-raising flour, extra
Preheat oven
Place flour in large bowl, rub butter into flour with finger tips till you get a fine breadcrumb appearance. Using a knife stir in milk, don’t over mix just stir till well combined. When its ready it should feel soft if its too sticky dust a little flour in. Roll out onto a floured surface. Try not to work it too much as long as its mixed then its fine, if you mix it too much you end up with tough scones J

Oh and for a sweet scone add a teaspoon of sugar in with the flour or if you want a dense scone subsitute half a cup of milk with cream (they are nice for scones jam and cream)
