I posted this on General Chat before I knew this forum existed. Its from an old Margaret Fulton cookbook and has always worked for me. It is very easy and much nicer than the bought stuff. And kids like to play with the leftovers.
2 cups plain flour
pinch of salt
2 tablespoons butter
2 tablespoons lard
cold water to mix
sift flour and salt into a mixing bowl, rub fat/butter into flour until mixture resembles fine breadcrumbs; add sufficent cold water (teaspoon at a time) and mix with a round bladed knife to a stiff dough that leaves the side of the bowl cleanly.
Knead very lightly until smooth, wrap in plastic (I put in a freezer bag) and chill in fridge for at least 30 min. roll out and use as per receipe.
Half this mixture does a quiche for me. It has a lovely silky texture and golden colour - I blind bake first for 15 min.
