View Full Version : Help me YUM-IFY Quesadillas!!!
I bought a Quesadilla kit this week in my groceries, but having trouble with how to make them LOL.
The box says to just use chicken, onion and cheese. My DH is a chef, so if I served him up a chicken/cheese foldover with a hunk of lettuce and a dollop of salsa, he will think I have given him DS's leftovers from lunch :laughing:.
Any idea's on how to turn this dish into something yummy for my fussy DH?!?!?! Whether it is added ingredients to the quesadilla's or something to serve them with. I am heading to the shops when DS wakes :).

I made them the other day and used more chicken then it recommends... and i put avocado on it. and i used light Mozzarella cheese so its lower in fat. maybe u could try tomato as well? or Capsicum?

Ive never seen a kit for them, but I make something like them......at least I think they are??
I just buy tortillas and use them. Then mix shredded BBQ chicken, tinned corn, chopped capsicum, spring onions, a little salsa, some philly cheese and some grated cheese all together. I then spread it on one tortilla, top with another tortilla, and then "cook" in my old faithful sandwich press. You can make them in a frying pan, just lightly cook both sides.
I found a recipe for this one day, i've added things and changed it slightly I'm sure, but the recipe definitely called these quesidellas. Not sure if they're anything like what your kit makes, but they are super yummy!

Id just serve it, if he doesnt like it he can cook something himself.. :p
Thats what i tell my DP (who is also a chef..)
The thing is most chefs seem to like normal, basic stuff every now and then so he will prob love it..
I would add avocado and tinned corn. yum
Maybe some diced red capsicum too..
And serve it with a garden salad with boiled eggs in it..
Marinate the chicken in whatever flavours you like - I would more than likely use some lemon zest, lemon juice, garlic and chilli. Or don't use chicken at all. Use beef mince cooked with onion, garlic, chilli, a little cumin and some oregano. Add a tin of tomato and reduce it all down and add a tin of kidney beans near the end.

Would beans go well in chicken? We do beans in mince with mexican food. DH loves beans so I hope they go!!

The kit is just the El Paso (sp) brand. It says 'new' on the pack so thought Id give them a go! Your version sounds yummy! I dont have a sandwich press but I soooo want one! The good ol' frying pan will have to do!

Ugh glad I'm not the only one with a chef :rolleyes:!! You are right, he just loves being cooked for after cooking for 150-200 people himself, doesn't matter if it is fancy or not. I just think the recipe sounds a bit too plain for a dinner LOL! I would LOVE to add avocado (yum!), but he hates hot avocado :laughing:. I guess I could add avocado in the salad.

Unfortunately I have to use chicken as that is what we have! But will definately do it with mince with what you mentioned next time, sounds devine :yes:.
