View Full Version : What to do with leftover breadcrumbs? (fresh ones)

I needed some breadcrumbs to make meatballs (the yummy bubhub slowcooker recipie!) and here you buy them fresh in the fridge section. I doubt they will freeze, so what can I do with them, bearing in mind I don't really eat bread anyway!

A topping on what? filling to pad out lentil burgers? Any other (more) brilliant ideas? I don't usually do crumbed fish and if I crumb chicken tenderloins I use sesame seeds!

I'd freeze them!

If you want to use them, how bout making some burgers or snack meatballs, or something like that. Cook them then freeze them so you have something you can use on a lazy friday night instead of take away.

Wasn't sure if they'd freeze alright. yeah I should make some meals for hubby while I am away in two weeks! He is having the horrors about microwave meals after living on them for weeks last year. Hmm don't eat dessert and my crumble has oats, brown sugar, coconut and flour, but it would be a good filler!! Should have someone around for dinner - oh that sound like hard work - going out tomorrow night anyway. Yep I will make more meatballs I think, he can cook spag and open a jar of tomato sauce stuff.

I freeze them.

I make my own using two or three day old bread and my food processor and keep a huge zip lock bag of them in the freezer for whenever I need them.

Very handy.

P.S. Fresh bread crumbs mixed with a little bit of melted butter, crushed garlic and some chopped parsley makes a great topping for fish. Press it on to the fish and bake in the oven until flaky. Delicious!

Buy large flat portobello mushrooms, and trim off all the stalk. Place on a foil lined baking sheet.
Mix together breadcrumbs, fresh pepper and crumbled feta. I also like fresh parsley & the flavour of a bit of fennel seeds. Spinach might go well.
'stuff' the mushrooms by spreading this mixture on top, heaping it a little.
Bake at 350 degrees till mushrooms have softened a bit and topping is starting to be golden at tips. Probably 20 to 30 minutes.

fish cakes!

to the bread crumbs add 1 tin drained salmon or tuna. 1 finely chopped small onion or shallots, 1 or 2 eggs, parsley, lemon juice and salt and pepper.

Shape into patties and fry in shallow oil until golden brown.

serve with sweet chilli cauce and salad

kids love these!

It's also a good way to use up stale bread (attention those who make their own bread, it's WONDERFUL for fishcakes)
