Muffin Recipes

Does anyone have any quick and easy muffin recipes? Maybe something with fruit in it?

Here is a good base one with cheese and corn added however I have done strawberries and white choc:yelclap: and bannana muffins.

Cheese and Corn Muffins
2 1/2 cups of SR Flour
1 1/4 cups of milk
1 egg, lightly beaten
90g butter, melted
1/2 teaspoon of salt
1 cup of grated cheese
1/2 cup of corn

Preheat oven to 180C. Lightly grease 12 muffin holes.

Sift the flour into a large bowl.Make a well in the centre. Combine milk, egg and butter, pour into the well. Add the cheese, corn and salt. Using a large metal spoon, stir until just combined (don't overmix).

Spoon mixture into muffin holes until 3/4 full. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Allow to cool in the pan for 1 minute. Turn out onto a wire rack to cool.
