Hi everyone, im a very novice bread maker (attempting to be anyway), i love making it by hand. The bread is yummo when hot, and very nice when cold but its a little "cake" like instead of "sandwich" like IYKWIM? What am i doing wrong? I am using bread flour(Laucke i think) and doing the recipe on the back.
Also does anyone have any good recipe websites for breads.
TIA

Are you mixing the yeast with the flour, then adding the water? I was doing this til DH told me to mix the yeast in the water til it dissolves, then add to the mix.
When you 'prove' the mix make sure the the tea towel/cloth is damp but not soaking wet. If it's too wet the water gets into the mix and can make it a bit doughy.
I use the Defiance brand (both mix & yeast) and have no probs. I get the 5kg bag and divide into 500g sandwich bags & put them all in a storage box on the bench
