Ive been thinking about dinner and I have canneloni...
How do you cook canneloni? I put them in the oven last time with a some cheese and they were hard and crunchy -gross
Do you boil them first to soften them before you use it? Are they suppose to be crunchy...sorry never had canneloni before

smother them in sauce before you bake them and the sauce will make them soft.

:iagree: I stuff them with whatever, lay them in a dish and pour over any pasta sauce you like, sprinkle with cheese and bake until soft.

I think it's a lot like lasange-the pasta soaks up the sauce and cooks in the moisture:)

I had the same problem as you MeAndMy2Kids, I stuffed mine with feta, mozeralla and spinach, put a tomato and onion sauce on top and more cheese......AND they still were crunchy :confused: I cooked them for about 45 mins too so i dont know what happened?

The packet actually tells you to cook them for around 4 minutes..... well my packet does...
I have chicken, spinach and riccotta and pine nuts, topped with sundried tomato pesto, and cheese... I dont like them smothered in pasta sauce personally....

Stuff them with mashed potato, and then layer them in the dish as you would lasagne - covered in meat sauce, and cheese sauce, topped with cheese sauce and grated cheese.
I don't know how long I cook them for, I am a terrible timer, but for about the same amount of time as lasagne.
They probably have to be completely covered in sauce, any exposed would be crunchy I would think.

Well im might give it another go...I might even boil them for a couple of mins to make them a little soft but still be able to manage to stuff them..and coat in sauce..
what do you serve them with?

i use the ones in the packet but have also rolled up fresh lasagne sheets ( a lot easier than trying to stuff the other ones!) cover them in napoletana sauce a bit of grated mozzarella and tasty cheese. i have made chicken and sweetcorn cannelloni, it has 310g can corn kernels, 2 chicken breasts,250 g ricotta, 1 leek, 1 bunch of rocket, 2 tbs dill and 1/3 cup mint leaves, 60g mozzarella and an eggwhite very good!

Okay, wanna know the EASIEST way to make SOFT cannelloni ?
Go to the refridgerated section at your local supermarket and buy the packet SOFT FRESH LASAGNE (like Latina or something)
Whatever filling you have - prepare it, get the lasagne sheets and lay one flat, put your filling in, roll it up and lay down in a tray, 'seam' side down. It's perfect ! No need for pre cooking or anything and it's soft and yum.
My fave filling is to get 2 packets of frozen lasagne, one tub of ricotta cheese (a large one) This will make heaps but you can freeze the extra.....defrost the spinach in a bowl in the microwave, strain of any extra juice. Stir in the ricotta, salt and pepper to taste. You can also add fried onion, garlic, bacon and mushroom (or any combination of this)
THis is the filling I put in the middle of my lasagne sheets.
Once I've put them all in the GREASED tray, I pour over a jar of tomato sauce like Dolmio or something - I actually like the Barilla ones. I then make a bechamel (white) sauce over the top of that, with heaps of grated cheese, pop in the oven for 30-45 minutes. Serve with a salad and crusty bread - YUM !!
You can never go wrong with these lasagne sheets for cannelloni - once you've done cannelloni like this you'll never go back to the hard ones !
