i put mince in my shopping once a week for a meal because its cheap and makes up heaps so good if family come over for dinner.
but theres only so much i can think of doing.
The main ones being
Spaghetti
meatballs
meat patties for hamburgers
Tacos (sometimes)
spicy mince/with kindney beans for on top of potatos
and thats about it?!?!?!

Individual meat pies- really good for sending with hubby when he goes to work for the day! And yummy for tea too

It may not be the healthiest option for you but I make sausage rolls out of mince. Let me know if you want the recipe? :D

a fave in our house is Porcupines which is mince mixed with rice and slow cooked in Tomato soup (heaps of recipes on the net) My mum uses the slow cooker and they always trun out amazing!!! I did them on the stove top the other night and they were pretty good (but the rice took ages to cook through and then when it was the meatballs were a bit soft and fell apart still tasted good though)

You should try Kangaroo Mince.
You can purchase it quite cheap - around $6-$7 a kg and it is 98% fat free.
Tastes the same when you put it into a bolognese / lasagna etc. The only exception is that is isnt dripping in fat.
Has anyone suggested Mince Morney - Mince, Tomato Paste, Pasta Sauce, Frozen Peas , Corn and Carrots.

how about spring rolls? 500g mince will make 20 spring rolls. packet of frozen spring roll wrappers ~$2 and rice vermicelli ~$1.
soften some onion and grated ginger (optional), add mince and brown. add grated carrot, grated zucchini (or any other vegie). add 2tb sweet chilli sauce and 2tb soy sauce. add softened vermicelli. add 1tb cornflour and some dried mint. wrap in spring roll wrappers. bake 20 minutes with a spray of oil. can be frozen before baking, then bake from frozen for 30 minutes.

Stir fry some mince, chopped onion, garlic, red curry paste, 1 Tab fish sauce, 1/4 cup coconut milk and a squeeze of lime juice along with whatever vegies you feel like - I use bean sprouts, spring onions, red capsicum and finely chopped green beans.
Serve it up with rice or in an iceberg lettuce leaf which you then roll up and eat like a spring roll. Kind of a Thai style San Choi Bau (which is another idea in itself for mince).

Try this - a recipe from Nan. Sounds a bit weird, but its fantastic!
Paw Paw Montespan
Cooking Time: 30 – 40 minutes
1 large Green Paw Paw, peeled & diced into small pieces.
500g Mince
1 large Onion, finely cut
445g can Tomato Soup
¾ cup Grated Cheese
Seasoning
Pre-heat oven to 180oC.
Cook Paw Paw until soft.
Add seasoning, then mash.
Put into the bottom of a casserole dish.
Saute mince with onion and put on top of Paw Paw.
Pour Tomato Soup over this (NB – Do Not add water to the soup!)
Sprinkle grated cheese on top and back in oven for 30 – 40 minutes.
Note: Instead of using a Paw Paw, you can substitute 2 or 3 chokos.
