View Full Version : Salmon - need ideas asap

Well because I sold my car, I treated DF and got him some Salmon fillets, but now dont know what to make with them...
I dont eat them, so it will be just him and DS...
How do you like it cooked?? And what goes well with Salmon.
We have tomatoes, broccoli, cauliflower, potatoes....
If it was summer I'd do a nice fresh salsa...
Any ideas????
Needs to be cooked tonight....as no room in the freezer!

I love salmon, but my DH hates it, so I do a salmon pasta bake, you can put vegies in that,
My Dh eats that, but if the salmon was on its own, he wouldnt eat it.

Was a sad day in history, but it was my old car not Ruby....
My 1980 Chrysler, that I fixed up, done ALL the work too...my first car, and I put her together..
Hmm thanks for the idea, but would prefer to put it on its own, so he can fully enjoy the salmon....
Do you have a george foreman grill? Salmon is beautiful on the foreman..just plain..no seasoning and i usually do it with some roast potato and sweet potato, and maybe still make the salsa to go on the side!!

I remember replying to another post about this recently :p.
I like it cooked in butter/olive oil combo in a pan, and squeeze in some fresh lemon juice whilst cooking.
Cooked to medium or med/rare, salmon should not be overcooked.
Things I like with Salmon:
Asparagus
Potato (I do a potato stack in winter, and put the fish on top).
Potato salad
Snow peas
Avocado
Baby spinach
Bok Choy
Broccolini
Zucchini
Hollandaise sauce
Garlic Mayo/aoili
Water cress
Rocket
Dill (herb)
ETA: Obviously not all together though LOL

Yeah we've got a foreman grill, and roaster...yummy roast lamb cooked in there on may occassions..lol..mmmm roast lamb
Hmm potato stack...Do you gently fry the potatoes (thin slices in a pan), then bake for a little bit?? (how I use to do them)

Yum fresh salmon. I would oven bake it with the potatoes and tomatoes.
Peel and par cook the potatoes. Combine the potatoes with the quartered tomatoes and toss in a little olive oil.
Rub the salmon with a little olive oil (both sides) and put skin side down in oven tray.
Strew potatoes and tomatoes in oven pan around the salmon and sprinkle with salt and pepper to season.
Put into a preheated 180 degree oven, covered with foil and cook for 20 mins. Remove cover and return to oven and cook a further 20 minutes (or until salmon flakes but is not dry).
Sprinkle with chopped continental parsley and serve with steamed broccoli.

I bake it, put in foil with some lemon juice and sprinkle with some herbs and some sliced spring onions if I have them. Takes about 40 mins depending on how thick the slices are.
I usually dry bake some small spuds and steam the other vegies - I know vegies seem weird with fish, but it's more filling that salad for men!
I sometimes grill it too, but if it's too thick that can be hard.

How do you cook your potatoes for that?
My Dh usually microwaves them and then slices them afterwards...
BUT I rub garlic on the skin (and leave skin on) then roast them until soft, then slice with a sharp knife. If you like them crispier you can fry them too :). You can also micro them to soften them before you roast if you dont have a lot of time.
Oh and sometimes I will put red onion rings in between the potato layers too, textures go well together!

Oh I forgot, serve with lemon wedges, squeeze of lemon cuts through the olive oil and the oiliness in the salmon.

Hmmm dont have Lemons, I do however have roma tomatoes which are gorgeous slow roasted.....
Hmmm now I dont know which way to go...
