View Full Version : Sausage Casserole recipes
My DP is a very fussy eater and I have 1/2kg of sausages that I need to make something with for his lunches.
I was hoping for some good ideas to make something with them.
The only criteria I have is that DP is anti-vegetarian. He will eat things like mushrooms, onions and maybe carrot if it is in small pieces.
Any recipes would be much appreciated!! :yes:

Well that was easy to find.
8 thick sausages
4 bacon rashers, chopped
2 onions, chopped
2 cloves of garlic, crushed
35g packet of salt reduced French onion soup (it is heaps better with the salt reduced one)
1 cup boiling water
1/2 cup dry red wine or beef stock
2 tablespoons tomato paste
100g small mushrooms, quatered
Boil off the sausages until cooked (I prefer to peel the skin off them here, they basically fall off anyway). Drain and cut into chunks
Combine bacon, onions and garlic in a pan, stir over heat for about 2 mins or until onions are soft.
Combine soup mix, water, wine (or stock) and tomato paste in an 8-cup capacity casserole dish, add sausages and bacon mixture, cover and cook in moderate oven for 25 mins. Stir in mushrooms, cook for 10 mins or until mushrooms are soft.
Enjoy. This is one of my faves.

McCormick also has a tomato and onion sausages slow cooker recipe out now.
You know Myz, he would eat that anyway!
Thanks Chunkydunks, that sounds good. I have everything except the french onion soup. Might take a quick trip to the shops..

If there are any others, please keep them coming!!! A little arsenal of sausage recipes will always come in handy as I dont usually eat them but DP does all the time.

What about a sausage stew type thing umm brown sausages, add onions, mushroom. a tin a canned tomatos add a bit of water let it simmer for an hour or so then make a ice gravy :)

I cheat and use packet ones, curried sausages, devilled sausages, sausage and potato pie, sausage casserole all yummy!

and one my mum used to do which he may not eat as its got spinach lol
sausages(I use about 8 but its not a strict recipe)
bottle of cream
pkt frozen spinach defrosted and drained
can of champignons drained or some fresh mushrooms
1 onion chopped
salt & pepper
rice to serve
Boil sausages til skins are loose. Peel and chop into bite size pieces
lightly sautee onions and mushrooms, add sausages and spinach and cream. Salt & pepper to taste. Mix through til all ingredients are hot and serve over rice. I LOVE this actually Im going to make it tomorrow lol now I thought of it!

I saw this in this months SFI and thought it looked a bit yummy.
1kg potatoes
40g butter/marg
3/4 cup milk
1 TBS olive oil
1 brown onion
750g sausages
1/4 cup tomato sauce
1/4 cup bbq sauce
1TBS worcestershire sauce
35g packet French onion soup mix
1TBS plain flour
1/2 cup grated cheese
1. Boil potatoes and mash until smooth
2. Preheat oven to 200degrees/180 fan forced. Heat oil in on medium heat in deep frypan. Add onion and cook until soft. Add sausages and cook until browned. Whisk together sauces,soup mix, flour and 3/4 cup cold water in a jug. Stir into sausage mixture. Bring to boil. Remove from heat.
3. Spoon sausage mixture into an ovenproof dish. Top with potato. Sprinkle with cheese. Bake for 25-30 mins or until cheese is golden.
Thnaks for sharing everyone. Packet mixes noted!! I think it is the much easier option and plan to get some on hand!!!
2girlssofar - That does sound nice, I might make that next week.
Chunkydunks - I made your recipe last night and it was nice. I couldnt be bothered going to the shop for the soup mix so I substituted a beef stock cube and some Pepper gravy powder to thicken it up but I think the soup mix would definitely have been better.
Do you reckon it would still work as well if I substitute the red wine with Guinness? Make it like a beef & Guinness pie in a pot with pastry on top???
