Okay, i know making icing should be a simple procedure, but mine just SUCKS! :laughing: It is SO sickly sweet :( Whenever i have cake at the shops it's always creamy and buttery with a hint of sweetness, which is how i want to make mine but dont know how to :o
Ok, so basically all i do is throw in half butter and half icing sugar with a splash of water or milk. Anyone have any icing tips for me to make it not so sweet and more creamy? Thanks! :)

I put in a small amout of butter and slowly add more icing sugar until i tastes just right.

you have to whip the butter until it is as white as possible. Then gradually add in the icing sugar little by little while still beating. then add i think it's 1 table spoon of milk. and beat it in.
I dont have the actual recipe here as I lent the book to a friend, so am unsure of the quantities. But that is the basic method anyway.

Instead of milk I add a tbsp of natural yogurt to the creamed butter and sugar and then add flavourings (cocoa, vanilla, lemon, etc)

Do you mean like Butter Cream?? This is the Icing I always use for my cupcakes. It comes out all fluffy and creamy, so you can pipe it on if you like.
Butter Cream Icing
Maxes enough for 1 dozen cupcakes
· 1/2 cup unsalted butter, softened
· 4 - 5 cups icing sugar
· 1/4 cup milk
· 1 teaspoon vanilla extract
Place the butter in a mixing bowl. Add 2 cups of the sugar and then the milk and vanilla. On the medium speed of an electric mixer, beat until smooth and creamy, about 3-5 minutes. Gradually add the remaining sugar, 1/2 cup at a time, beating well after each addition (about 2 minutes), until the icing is thick enough to be of good spreading consistency. You may not need to add all of the sugar. If desired, add a few drops of food coloring and mix thoroughly. (Use and store the icing at room temperature because icing will set if chilled.) Icing can be stored in an airtight container for up to 3 days.

This is the recipe I tried the other day. I am never good at making icings ever so thought I would try a new one. It kind of turns out like the mock cream on the cakes you get from woolies just minus the amount of shortening that is put into it.

It is not sickly sweet either.
Fluffy Cocoa Frosting
Ingredients:
2/3 cup milk
3 tablespoons flour
6 tablespoons butter
5 tablespoons shortening
2/3 cup sugar
1/4 cup cocoa
1/2 teaspoon vanilla extract
Preparation:
Blend milk and flour in a saucepan; cook over medium heat until thick. Cool. Cream together the butter, shortening, and sugar; beat in cocoa. Add cooled flour and milk mixture. Beat until fluffy and sugar is dissolved.
Beat in vanilla.
This frosting will frost a two layer cake.
Just take out the cocoa if you want a plain recipe or want to add colouring to it.

Butter knife
Method:
Drive/Walk to your nearest Woolies/Coles.
Quickly head to the cake-mix aisle.
Move your head around looking up and down the shelves, looking specifically for red packaging.
Find Betty Crocker Frosting, in either chocolate or vanilla, in a big tub...
Pick it up, head to the counter, and hand over your $5 (or so).
Go home.
Open red lid, peel back foil lid, dip knife into tub, and spread over cooled cake.
Serve. :p

Ohhhh that Betty Crocker icing is good. We had one in the cupboard and it was just out of date. I opened it and had a taste it is so yummy. Then DS1 sat there with the tub and ate half of it lol.
The rest got thrown in the bin.

im also a cheater my mum works at a bakery so i just head down to her work when i want icing and get some of theres that they put on there cupcakes so yummy.

I have a less buttery one, in case you were interested.
1/2 cup icing sugar
1 knife scoop butter (about 7-14g)
water
Sift icing sugar, add butter and your flavour (eg cocoa, lemon etc.) add a dash of water and stir. Keep adding water until you find the right consistency.
It's not so sickly buttery sweet, and when done with cocoa, you can really taste the chocolatey goodness of it all. And it's so easy! :)

bleugh betty crocker icing is feral, much better to make your own :yes: I do mine similar tonomsie but no water.

I use cream cheese to make it less sickly,.... 250g creamcheese, icing sugar (2 cups) some lemon rind and a tablespoon of butter,...

Thanks everyone, the beating definitely helped, i feel like a goose for not thinking of it before but im no Betty Crocker :laughing: I will try that cream cheese recipe too, sounds YUMMY :yes:
