Our 7yo DS has asked to make dinner tonight! He is going to make us Tuna Balls. Not sure what's going with them yet.:D

It's our son's recipe actually. Where he got it from is anyone's guess. It's pretty straightforward:
Mix tuna with loads of mashed potato. (optional lightly fried onion can be added too) and roll into balls. Do the egg and breadcrumb dipping and lightly fry in a pan, giving them a little bit of a squash. DH likes to deepfry them but I'm not a big fan of deep frying.
You can make them whatever size you want. Our children like them small so they can eat them as finger food.

I have a few other simple tuna recipes if you or anyone else is interested. Let me know.:chef:

Ok here are the recipes I use:

TUNA NOODLE BAKE

150 GMS Pasta pieces (any small ones)
1 cup broccoli florrets
1/2 cup frozen peas
1 tbs oil
1 small onion
425 gm can tuna (springwater or brine)
300 ml tub sour cream
1 cup grated tasty cheese.

Bring a large pot of water to the boil and cook pasta for 5 mins. Add broccoli and peas, return to boil and cook further 8 mins. Drain and set aside. Heat oil in same large pot and saute onion-gently stir in tuna, then add sour cream and half the cheese. When sauce is smooth, add cooked pasta and veges. Spoon into microwave proof dish, top with remaining cheese and microwave for 2 mins. ( You could do this in the oven for a bit longer instead of microwave).

This is a really easy one!

TUNE PIE(This is like a shepards pie, only with tuna.

425 gm can tuna
lots of mashed potato
lots of grated cheese

Put tuna into base of oven-proof dish. Top with potato and then cheese. Bake until cheese is golden. Eat.



TUNA AND RICE

425 gm can tuna
med onion
2 tbs tomato paste (give or take)
sour or fresh cream (personal preference)
enough cooked rice for everyone

Lightly fry onion in large pan. (works well in electric frypan). Add tuna and mix together. Add tomato paste and work in well. Cook for a couple of minutes then turn down the heat and add cream. Stir well. Serve over the rice.

For dinner tonight it will be roasted garlic and onion crumbed scotch fillet steaks with mixed veggies and mashed potatos

although DP would prefer Hungry Jacks:barf:

I think i will be making a chicken and brocoli pasta. Nice and easy! All that tuna talk has made me want some! Might have some for lunch:thumbsup: !

Osso Bucco and veges tonight. I get my f&v home delivered and have an overflow of potatoes, sweet potato and beans ATM, have to use them up.

We are having Ham & Spinach quiche (or Ham & cheese pie as DS1 calls it) with salad.

I make it every week as it's the only way to get DS1 to eat some sort of vegetable. It's yummy and sooooo easy to make too! :thumbsup:

last night's ratatouille converted into a sort of pasta sauce with chillis and more tomatoes and whatever else might be in the fridge (without the chilli for madam)
