View Full Version : Healthy slice recipes
DD1 has just started taking an interest in cooking and I find slices pretty fail proof (I'm not the world's best baker!) so am after some healthy (or at least semi healthy) slice recipies!!! Nothing that contains nuts (unless it would taste fine without nuts).

How bout an zuchinni slice or Apricot and Muesli Slice (recipie below)?? :)
1/2 cup untoasted muesli
1/2 cup SR flour
1/4 cup rolled or quick oats
1/4 cup coconut
125grams dried apricots
1/2 cup brown sugar
185grams butter or marg
2 tablespoons golden syrup
2 eggs
Mix muesli, flour, oats, coconut, chopped apricots and sugar together.
Melt butter and golden syrup together over low heat or in a bowl in the microwave. Pour into muesli mixture.
Stir in 2 lightly beaten eggs and mix all ingredients well.
Spread into a slice tin and cook in moderate over for 30minutes.
Allow to cool and cut into squares or slices :chef:
*** Some days the mixture is quite moist or runny so I usually add some extra oats or any left over dry cereal if this is the case...
Thanks Aussiemummy! I'll have to substitute the muesli with something else though cause they are all 'may contain traces of nuts' products unfortunately. Thanks for the recipe though!!

:chef: Apricot Bars
185 g butters
2 tablespoons golden syrup
¼ cup Self raising flour
¼ cup Plain flour
½ cup natural muesli
½ cup brown sugar
½ cup finely chopped dried apricots
¼ cup sultanas
¼ cup rolled oats
¼ cup desiccssated coconut
2 eggs beaten lightly
Grease a 20 x 30cm lamington pan, line with baking paper. Combine butter and syrup in a small pan on low heat and stir until all melted. Sift flours in a large bowl and add muesli, sugar, coconut, rolled oats, sultanas, apricots. Stir in eggs and cooled butter mixture.
Press mixture into pan, bake in a moderate oven for 25minutes. Cool in pan. Cut into fingers before serving. Store in an airtight container for up to 5 days.

1 cup chopped Dried Fruit
(Sultana’s, Apple, Apricot, Paw Paw, etc)
4 cups Muesli
(Sultana Bran, Sustain or any muesli)
1 cup Coconut
½ cup Self Raising Flour
400gram can Sweetened Condensed Milk
2 tablespoons Honey
2 Eggs, lightly beaten
Preheat oven to 160°C. Line the base and sides of a 20cm x 30cm oven tin with baking paper. If you don’t have baking paper, grease well with butter or oil spray.
Mix all dry ingredients in a large bowl. Pour in Condensed Milk, Honey and Eggs. Stir until combined.
Pour into tin and press down evenly. Bake for 25 mins or until top is brown. Cool in tin before removing and cutting into bars.
Thanks for that yummy mummy of 5! Unforutnately DD1 is allergic to milk so the mueli bars are out cause I don't know of any substitute for condensed milk!
Thanks though, it sounded great and I will keep it incase she does grow out of her allergies!
