I am after some yummy soup recipes.... preferably low fat. :chef:
It is certainly the weather for soups here in Melbourne brrrrrrrrr

I live in Melb too and made soup today!!! My mum has made 'pea & ham soup' for ever and a day...... I was reading the 'slow cooker/crock pot' post and was inspired so I made it in the slow cooker but you can do as well on a hot plate.

Cut up about 4 carrots, 1 or 2 onions, half a celery and add these to half a packet of yellow split peas and a couple of bacon bones. Add enough water to cover everything and some salt and pepper and let boil away for as long as possible (the longer the thicker it becomes) but I think it needs about 3 hours minimum.

Thanks for the lovely recipe.... yummy!! I made some soup yesterday - Chicken and vegie.... was quite nice! Tonight I am going to make some pumpkin soup.... :chef:

Here is a chicken and corn soup, easy and quick to make

Fry either an onion or leek
Add chopped up chicken (as much as you want)
Add chicken stock, can or 2 of creamed corn and can of corn kernels and simmer.
Done.

Measurements depend on how thick you want it so just go with what you want.

Can also use bbq chicken, just add it with everything else after you fry the onion/leek.

I agree that in winter, nothing beats a nice yummy soup to warm you up from the inside out. you can make it in big batches and freeze, so you can heat up, great for quick lunches with fresh crusty bread!!

A good basis for most vegie soups is
chopped onion, carrot, potato & celery, cooked with (low salt/low fat) vegetable stock and then you can add either
pumpkin or zucchini or leek and once its all been cooked in a saucepan
you can blend it up and it makes a yummy lowfat soup

Another fave of mine is
Roasted vegetable soup with thai pesto

2 baby eggplant sliced
2 red capsicum
300g pumpkin peeled and cubed
1 sweet potato sliced
1 red onion quartered
2 zucchini cut into chunks
2 carrots sliced
3.5 cups of water and 2 vegie stock cubes

Toss the vegies in olive oil with several cloves of garlic, bake in a moderate oven (180 deg) for 45 mins. Place all vegies, garlic, stock cubes and 1 cup of water in food processor and process. Then place mixture in saucepan, add stock and water, bring to boil, reduce heat and simmer for 10 minutes.

Thai pesto - blend 1 bunch of coriander, mint and the juice of one lemon, 2 cloves of garlic and 2 Tbsp of grated parmesan cheese, add some olive oil during the blending process and serve the soup topped with a spoonful of pesto YUM!!!

Okay my final fave soup is
Roasted Tomato soup

10 Roma tomatos halved
1 Tbsp fresh basil torn
1 Tbsp fresh oregano chopped
2 tsp olive oil
2 onions diced
2 cloves garlic crsuhed
1/4 cup pine nuts roasted
1/4 cup tomato paste
2 cups vege stock
1/4 cup pine nuts, toasted extra
1/4 cup parmesan cheese

Place tomatoes in lightly greased oven tray, sprinkle with basil, oregano and half the olive oil, bake at 200deg for 25 mins or until tomatoes are soft.
In large saucepan, heat remaining olive oil, saute onions and garlic until soft, add pine nuts and cook for a minute. Add roasted tomatoes, tomato paste and stock and simmer for 10 minutes. Puree tomato mixture and parmesan until smooth, then return soup to pan and simmer for 5 minutes, and then serve with sprinkle of extra pine nuts!!

YUMMO!! Okay, I'm off now, this has made me hungry!!

Tomato Celery and Apple (a fairly light but tasty soup)

1 large onion, peeled and finely diced
1/2 head of celery, finely diced,
1 large cooking apple, peeled, cored and diced
2 tablespoons olive oil
3 * 400g cans of chopped tomatoes
300ml vegatable stock

Cook the onion,celery and apple in the olive oil over a very low heat for 10 mins.
Add the tomatoes and stock and season with salt and pepper.Bring to the boil , then reduce the heat and simmer for 20 mins. Puree ina blender, reheat gently and adjust the seasoning if required.

I made a yummy vege soup last night. Here it is:

100g Green beans, chopped
250g Pumpkin, cubed
2 Carrots, 2 Zucchini's
1 onion (you can add two if you like)
garlic
400g can Butter beans
420g can crushed tomatoes
1L Vegetable or chicken stock
Spices to taste.

Put all veges in a large pot. Add stock, garlic and tomatoes, and bring to the boil.
Reduce and simmer until veges are cooked through.
Once veges are soft, process 3/4 of the soup until very smooth.
Add back to the pot as well as the beans.
Reheat gently.
Serve with crusty bread.:chef:
