Anyone have the recipe for Lolly Cake? My DS1 has a multi-cultural day at school coming up and I'm thinking of making NZ Lolly Cake for the kids as a traditional NZ food.

Im sure I read a thread somewhere on here not so long ago about how to make lolly cake.Im from NZ and believe it or not had never heard of it.Hopefully someone can direct you to where it is hiding!

I just googled it and this is what I got.
Bamboo roll (lolly cake)
Ingredients
24 Malt biscuits
1/4 cup cherries (optional)
1/4 cup coconut
16 marshmallows (best to use eskimos)
1/2 - 3/4 420g tin of condensed milk
Method
Crush biscuits very finely. Add a little of the coconut.
Chop up the marshmallows and add the cherries(optional)
Add the half tin condensed milk and mix well.
You can either roll into balls or you can roll in to a log and then roll in the rest of the coconut, then place in the fridge when hard cut into slices.

my mum made lolly cake for MY school when I was in year 2 for a multi-cultural day too! :D

* 120 g (2.5 slices) of butter
* 250 g of malt biscuits (one packet) (UK: substitute rich tea biscuits)
* 180 g of Fruit Puffs (one packet) (UK: substitute 'Foamy Fruits', Asda own-brand)
* 200 g (1/2 can or 7 ounces) sweetened condensed milk
* shredded coconut
* a pinch of cinnamon (optional)
Only thing I can't get here in Oz are the 'Fruit Puffs'! Anyone know a good substitute? I can get my mum to send me some over but probably not worth the $$$ if I can substitute with something else.

thats the recipie we use, and the only thing here that is close to the fruit puffs is, eskimo's/ banana's etc

There are a couple of Kiwi Shops in Perth that sell fruit puffs (and loads of other yummy NZ treats). Not sure if there's something similar on the east coast though.
Never heard of it!! I must not be a proper kiwi. :p
I might try making one though, they look sickeningly sweet...right up my alley! :D

Yep, it is sickeningly sweet - awesomely so!!! I make it sometimes. mmmmmmmmm.....!

mmmmm yummy. I'm just sitting here enjoying a big piece of NZ lolly cake that I made for my kiwi DH's birthday on the weekend. My MIL sent the lollies over from NZ for me this time, so I was just 'googling' to see if I can buy them in OZ anywhere so I can make it more often. So delicious :yes: Does anyone know any online shops that sell the fruit puffs? I don't live anywhere near any sort of import lolly shops :thumbsdown:

I have never been able to find a FRUIT PUFF substitute here.. my mum posts them over.. customs always opens them but they do make it, there is a kiwi store in Brissie that sells them and an online NZ store

I bought some fruitpuffs last week in Brisbane at the Confectionary Warehouse! So excited to find them!
