Chicken and sweetcorn soup.

Buy a bbq chicken
Pull most of the meat from the bones and put the bones in a pot. Cover with water and simmer for 1/2 hour.

remove bones and add 1 tin creamed corn, 2 chopped shallots, 1/2 tsp chinese 5 spice, 1 clove garlic, 1 tsp chopped ginger to the stock.

Bring back to the boil.

Beat 2 eggs and drizzle into soup while stirring slowly.

(you can also make this with bought chicken stock or stock powder)

Add back some of the shredded chicken meat.

Not sure of its source, but my Mum originally made this soup and I got the recipe off her. Its become a family favourite (when I've got the time now days). She squidged it all up with a bamix when I first watched her make it, so I've always done the same - makes a smoother soup with the chicken more incorporated into the soup.

:chef: Creamy Chicken Soup

1.25kg chicken
2 large onions
90g butter
1/3 cup plain flour
2 chicken stock cubes
2L water
4 sticks celery
1 medium parsnip
salt and pepper
1 cup cream

Put chicken, water, one peeled and chopped onion, two sticks celery in pot, bring to boil and simmer two hours. Reserve 7 cups stock.

Melt butter add one peeled chopped onion, two sticks celery chopped and chopped parsnip. Cook until onions are tender. Add flour, stir and cook one minute. Remove from heat add stock. Stir, heat to boil and soup thickens. Simmer two minutes. Season with salt, pepper and stock cubes. Simmer gently ten minutes.

Remove skin from chicken and, cut meat into small cubes. Just before serving add chicken and cream. Heat, yummy!

Or there's always just good old chicken noodle soup.

Do the BBQ chook stock again, but cook it a bit longer.

Remove the bones and add 1 or 2 tbsp of soy for colour and salt.

Add 1 packet of hokkien noodles and bring back to the boil.

Add back some of the chicken meat.
