:D We love spinach or silverbeet! So we always adds into just about any dish, sound crazy yeah? But I guess with a small bub sqwuacking, these dishes suit us best for the time being :D
For spinach fritata: par boiled the spinach, add some ham if you wish, 5 eggs, mix them all up and put into the oven 180 degree C for 10-15 mins, yum! Goes well for quiche too.
For spinach curry (mild curry so it will be alright for us the breastfeeders!), get one of those curry mixture instead of putting the whole jar, just use one or two tbsp add small tin of coconut milk, add dice/slice beef/chicken/etc , add par boiled spinach, serve with boiled rice, not bad for a change!
For breakfast, this more of my husband recipe which he stole the idea from the Belgium restaurant when we went to Auckland. You need smoked salmon, mushies, eggs, spinach of course. Stir fried the mushies, then add the spinach. Soft boiled the eggs. Serve the spinach, mushies, soft boiled eggs topping with the smoke salmon....mmm!
