Does anyone have a yummy recipe for minestrone soup.

Well, my mum used to say we were having Minestrone Soup for dinner when people came over - but while I was helping her cook it we called it "Fridge Soup" LOL because basically you chuck everything in it!!

Boil up some water with soup vege's in - celery, onion, garlic, parsnip, turnip, carrot. Etc etc - whatever vege's you've got in the crisper that need to be used!! Boil until vege's are soft.
It's a tomato based soup, so chuck in a few tins of tomato's. Maybe some tomato paste, or even a few splashes of pasta-sauce-in-a-jar, especially if it's got something like red wine or mushrooms or roasted capsicum in it.
Add pasta - whatever packet is open and threatening to spill onto the floor every time you open the pantry :p Bow ties are good, spirals are better, shells are great too. If you had nothing but spaghetti you could probably chuck that in - I'd break it into thirds first, make the pasta a bit more bite-sized.
Add herbs - FRESH herbs are always the best, but dried do a pretty good job too. Basil, Oregano, Parsely.

Taste it (very important) add salt and pepper to taste (me personally I love good cracked black pepper in a soup like this, it's tasty but mild, whereas white pepper is hotter so it depends what you like.)

Let it simmer away, filling your house with the magnificent Italian aroma of home-cooking. Make sure you have some beautiful fresh crusty bread, you could even make garlic bread (but me personally I just like crusty bread and butter with it) or you could make bruschetta MMMMMMMMMMMMM I am so hungry right now!!!


It's the kind of recipe with a bitta this, a bitta that, a splash of this, a splosh of that, add red wine if you like, add more water if you like, add whatever vege's you like, put meat in it if you want (me personally I don't, but it's up to you).

the_queen.......thanks so much for this idea. I went home and made it that weekend and it was delish. DH went back for 3rds considering I made 7 litres of it.

I divided the portions and froze them for when we want some next time :yelclap:
