whats your favourite recipe to cook?

One that I cook a LOT (and hence don't want to make it for a while) is apricot chicken. I just get about 8 drumstics, add a pkt of french onion soup then can of apricot nectar and mix together and bake, covered in oven for 1.5 hours.

Nice with pasta, cous cous, mashed potatoes, potato bake, crusty bread.

I love soups, specially now its getting colder. This one is a Weight Watchers recipe, so its even good for you!


Carrot, tarragon and yoghurt soup

500g carrot, peeled & chopped
4 vege stock cubes dissolved in 1.26 litre hot water
1 med onion chopped
dried or fresh tarragon
1 tbs lemon juice
150g skim plain yoghurt

Carrots, stock, onion and tarragon in large saucepan, season with salt and pepper to taste. Bring to boil over medium-high heat, then simmer 15 minutes or until veges are soft.

Strain stock into a jug and reserve, puree veges until smooth. Return puree and stock to saucepan, stir well, adding lemon juice. Spoon yoghurt on top of soup when serving.

One that I cook all the time is Spaghetti bolognaise...and my recipe is soooo easy and yum!

1 onion diced
500g mince
1 can chopped/diced tomatoes
1 can big red tomato soup

Thats the basic recipe - fry onions and mince till brown in a bit of oil, then add both cans.
Simmer for about 10 mins (but usually not really necessary). Add salt to taste.
Serve with spaghetti or any other pasta and cheese on top! mmmmm

I also try and get a few more veggies in there - i grate a whole carrot in, and add about a cup of mixed peas and corn. I also usually fry the onions and mince with some garlic too.
