slice and bake biscuits

250g butter, softened
1 & 1/4cup icing sugar

beat until light and fluffy

2cup plain flour
1/2cup rice flour
1/3 cup corn flour

sift flours together. add 1/3 to butter and fold in, continue

2Tbs milk

add to mix, combine

knead mix gently, roll into two logs, refrigerate 1hr, slice to 1cm pieces, bake 180degrees until golden brown - 15-20min

logs can be frozen, wrap in glad wrap and foil, for 3months, thaw in fridge.

Flavourings

plain - add vanilla to butter for plain biscuits (vanilla paste is best, but essences works)

orange & poppyseed - grated rind of 1 orange to butter, 2Tbs poppy seeds to flour

m&ms - use cooking m&ms available in cooking aisle

pistachio & lemon - grated rind of lemon to butter, finely chopped pistachios to flour (cooking nuts available in the cooking aisle)

I've made chocolate ones, but can't remember the recipe off the top of my head (I've typed this one hand with bub on the b@@b!)

Easy as biscuits.

1 tin condensed milk
1x250g butter (room temp, cubed)
3 to 4 cups SR flour.

Beat all together until all combined. Start with 3 cups of flour and add 4th cup gradually until stiff biscuitty dough consitency is reached.

Refrigerate.

Preheat oven to 200c and use teaspoon sized balls of dough.

Cook until golden brown.

Nice as jam drops, with a dollop of jam in the middle.

PREPARATION:

Cream butter and sugar until light and fluffy; gradually stir in flour until well blended. Spread or pat in an ungreased 13x9x2-inch baking pan. Bake at 300° for 30 to 40 minutes, until just lightly browned.
