I'm sick of stews and curries. Had fritatta last night. Had mini quiches for lunch on Saturday. No matter how much I look at everything I have I can't come up with anything but the generic things that we have heaps! Need some fresh ideas if anyone can help :chef:

Do you have something in the fridge/freezer you want to use, or just a whole heap of new ideas are needed?

chicken parmigana and mashed taters
meatballs and mash
homemade sausage rolls or chicken nuggets
(I have recipes for the above if you would like them)
crumbed steak and potato bake
savoury mince and mash

Soup? Though I suppose that's still along the soup/curries line. What about a big vegetable pie? Are you vegetarian? I just wondered cause of your title.

You could make chickpea burgers! YUM. Or felafel? served with pita & hummus and tabouli?

What about a stir-fry?

My favourite (cause it's tasty and easy!) is:

chicken or beef (I think it tastes nicer with chicken)
soya sauce (as much as you want ie. if you prefer a dryer sauce or quite juicey ... iykwim)
oyster sauce couple of tablespoons
chilli to taste
red curry paste 3 heaped teaspoons
garlic to taste
vegies of choice


Stir-fry chicken/meat with garlic till nearly cooked ... then add the red curry paste and chilli and stir-fry for about 2 minutes. Add the soya sauce and oyster sauce and vegies .... stir-fry till cooked and serve on a bed of rice.

YUM.

Leave out the meat if you are a vegetarian. lol

Pasta e fagioli (Pasta & beans). There are heaps of variations for this basic recipe, but this is the one I use.

Set pasta to cook.
Meantime, saute some onion & garlic. Add diced 'hard veg' (ie carrots, beans, capsicum - anything you want that takes a bit longer to cook. Saute a few minutes then pour in some vegetable stock to just cover. Season with salt & pepper & let simmer a few minutes till veg start to soften but aren't fully cooked.
Add a tin of white beans (drained & rinsed). Continue simmering till veg are nearly done - add more stock if it is thickening too much.
Drain your pasta & add to the pan of veg & beans, & toss together. Add any chopped leafy veg (spinach, greens) and herbs to season. simmer just a minute or so to let the pasta absorb the broth & flavour.

Serve with freshly ground pepper & parmesan.

There's a great vegan company called Frys that sell animal-free schnitzels, sausages and burgers in Woolworths stores now (frozen section). They are really tasty and quicky and easy. After just grilling them in the sandwich press for a few minutes I cut the schnitzels into strips for DS and add whatever veges/legumes we have along with some vegan gravy. Yummo! There's some great veg websites out there with heaps of recipe ideas too. Which state are you in? I'm part of the Qld Veg Society www.vegsoc.org.au (http://www.vegsoc.org.au) :D

Im making a spinach and ricotta cannelloni in a spicy tomato and basil sauce tonight. Its vegetarian, yummy and really easy!

All you have to do is lightly pan fry onion in a little butter with garlic. Add spinach just until it wilts. add a little nutmeg, salt, pepper and herbs if you like. let it cool. Then add it to riccota cheese and mix.

Then stuff cannelllonis (large pasta in the shape of a cylinder).

Then in a oven baking dish, pour whatever sauce you like - whether its a tomato pasta sauce. line cannelonis on top and then pour remaining sauce on top, and some drops of water.

Top with tasty/mozerella or parmesen cheese, cover and in the oven for 20 mins at 180 degrees.

And you're done! :chef:

Ewww! I can't stand it but I guess that is because we had to eat it A LOT when I was growing up. The rest of my family loves it....

I had the schnitzels with mashed potatoes and peas and corn (frozen veggies :o) tonight.

Thanks for the inspiration! Have been unintentionally out all day today!

Have to try the canneloni when we have a full day at home and can spend time on cooking :p that sounds just so yummy!

I make some pretty mean lentil and chickpea burgers. Even DS eats them so that saying something.
