Hey girls

As hard as it is for me admit,i'm not a very good cook! :laughing: But I'm eager to learn. A couple of you girls were nice enough to give me some yummy recipes yesterday for chicken curry. Just wondering if any of you have some nice meat/chicken casserole or stew recipes that arent toooo hard & pretty basic.

Ooh, good idea. I bought a casserole dish about a month ago.

Its still sitting in the box because I don't know how to make a casserole :laughing:

I'd like a chicken casserole with heaps of veges.

And a lamb one.

Spicy Apricot Lamb Casserole

500g lean lamb leg steaks
1/2 cup dried apricots
1/4 cup plain flour
cooking spray
1 cup onion diced
1 cup carrot sliced
1 cup celery sliced
2 cups apricot nectar
2 tsp chicken stock powder
300ml jar medium salsa
1 tsp curry powder
1 cup water

Preheat oven to 180
Cut lamb into large cubes. Cut dried apricots in half.
Coat lamb in flour and place in non-stick frypan that has been coated with cooking spray. Toss meat in pan till browned.
In large casserole dish place all ingredients, stir until combined.
Place lid on casserole dish and cook in oven for 1.5 hrs or until vegies cooked to your liking.

(Can replace lamb with either diced chicken or rump steak)

Porcupine Casserole

Sauce:
1 x 420g can salt reduced tomato soup
1 x 415g can no added salt crushed tomatoes
1/2 cup finely diced onion
1 cup water
2 tsp chicken stock powder
1 tsp dried oregano
1 tsp crushed garlic (in jar)

Meatballs:
500g lean beef mince
1/2 cup raw long grain rice
1 tsp chicken stock powder
1 egg white

Preheat oven to 180
To make sauce:
In large casserole dish combine all sauce ingredients. Set aside.
To make meatballs:
In medium size mixing bowl, combine all meatball ingredients. Using your hands, mix well together. Shape into 12 round meat balls, add to casserole dish.
Bake for 1 hour.

(Can replace beef mince with chicken or pork mince)

ITALIAN LAMB CASSEROLE

800G lamb cut into 3sm cubes
2tbs of olive oil
1 onion finally chopped
1 carrot finely chopped
1 stick celery finely chopped
2 cloves garlic crushed
1/4 cup red wine
2tbs tomotoe paste
2 cups chicken stock
1 bay leaf ( i dont use this)
2 sprigs of rosemary ( i just use the herbs from a jar)
water
2 parsnips peeled and chopped
2tbs flat leaf italian parsley ( i just use the herb parsley from a jar)

Preheat oven to 180 degrees
heat lrg post over high heat and coat lamb with oil to cook for 5 mins or unitl browned. Remove from pot / pan and set aside. add onion, carrot, celery and cook for 5 mins, return lamb and add garlic, red wine and tomato paste and cook for 5 mins longer. Add stock bay leaf, rosemary, and enough water to cover lamb. The pour into a casserole dish, cover with lid and bake for an hour
Add parsnip and cook for a further 40mins
serve with sprinkles of parlsey if desired

Irish stew


500gms beef or lamb
1kg potatoes
2 onions
1/4 tspn pepper
1 cup water
1 1/2 tspns salt

cut meat into bite size pieces. slice the onions and chop up half the potatoes.
layer the meat, vegetables and add salt and pepper to casserole dish. Add water to halfway up pot. cover the top with more diced potatoes, simmer for 2 hrs and stir frequently though i cook mine in the oven at about 180 degrees for the 2hrs,

this is soooo yummy

INGREDIENTS
1 kg round steak
flour
2 tablespoons oil
60g butter or margarine
4 onions
1 tablespoon flour, extra
2¼ cups water
2 beef stock cubes
salt, pepper



METHOD


Trim excess fat from meat, cut meat into pieces approximately 5cm x 10cm. Dust each piece of meat lightly with flour, which has been seasoned with salt and pepper.

Peel onions, cut in half, then cut into 5mm thick slices.

Heat oil in frying pan, add half of the meat, brown well on both sides. Remove from pan and place in large saucepan or casserole dish, repeat with remaining half of the meat.

Add butter to frying pan, stif until melted and incorporated with pan juices. Add onions to pan, cook until onions are transparent. Stir in extra flour, cook a further 2 minutes.

Gradually add water, add crumbled stock cubes, stir over heat until sauce boils and thickens slightly, season with salt and pepper. Pour sauce over meat in saucepan, cover, simmer gently over low heat for 1½ hours, or until meat is cooked.

Serve with mashed potatoes and a green vegetable.

chicken Casserole with herb sour cream

1/4 plain flour
10 chicken drumsticks\
1/4 cup olive oil
12 picklings onions, peeled\
4 bacon rashes, coarsley chopped
3 cloves garlic, finely chopped
1/4 cup chopped fresh rosemary
1/4 cup chopped fresh thyme
Extra 2 tspns plain flour
2 tblsps tomoto paste
1 cup dry red wine
1 1/2 cup beef stock
3 dried bay leaves
Fresh bay leaves to garnish
200g small button mushrooms

Herb sour cream
250g tub light sour cream
1/4 cup chopped chives
1 tblsp chopped thyme

Place flour in bowl. Add chicken drumsticks and toss to coat all over.
Heat 1tblsp of oil in large pan. Add chicken,in batches, and cook for about 5 mins, or until brown all over. Remvoe from pan and transfer to large ovenproof dish.
Heat remaining oil in same pan. add onions, button mushrooms and bacon. Cook stiring until onion is soft and bacon is lighlty browned. Add garlic, and cook for 2 mins. Spoon onion mixture over chicken in dish. Sprinkle with rosemary and thyme.
Add extra flour and tomoto paste to same heated pan. Stir over low heat for 1 minute. Stir in wine, stock and bay leaves. Bring to boil, then remove from heat and pour over chicken. Cook uncovered in moderate oven(180C) for about 45 mins or chicken is tender. To make herb sour cream combine all ingerdients in a bowl.
Server chicken casserole topped with herb sour cream and bay leaves

I was wondering what you all think of this. I and I no others took the time to find these reciepes, type them up for us all here etc. Then i was on another forum ( one i just pop my head in, by no means anywhere near as good as bubhub) and i mean word for word the recieps i had posted here and some of the others had been copied. I dont mind so much but i mean they could have refernced where they had sourced them i no when i wrote mine i sourced the book. They have just copied and pasted as it is sourced by the same book but it has my extra comments in ( ) to prove it.:shame: Just wondering what your thoughts are

My family love this one we have it with mash yummo!!!!

Beef Casserole

675g Stewing or brasing steak
85g smoked bacon
2 onions
1 clove garlic (use minced garlic from jar if don't have cloved)
450ml beef stock
2 carrots
1 large pinch mixed herbs
2 Tbs oil
2 Tbs parsley (if I haven't got fresh i just use dried)
1 Tbs flour
1 Tbs tomato puree (or use tomato sauce)
salt an pepper

Set oven at 180oC.
Chop onions, bacon, slice carrots and dice meat.
Crush garlic
Mix flour with salt and pepper and coat diced meat in it.
Heat 1 Tbs oil fry onion and carrots. Remove and palce in medium casserole dish with lid.
Heat opther 1Tbs oil, add meat until cooked.
Place in casserole dish and add tomato puree, garlic, bacon and herbs
Add stock and stir.
Put lid on and place in oven for about 2 hours.

does anyone have any caserole recipes with out mushrooms or onions in it? my DP dislikes those vegies alot. and i'd love to have a go at making a yummy caserole :)

Have a look in the slow cooker thread there are heaps of casserole yummy recipes there that you could do in the oven:)
