I thought I would share the recipe for DS' favourite new food:
1/2kg piece of pumpkin
1/4 cup frozen pea and corn kernels
1/2 cup self raising flour
2 eggs, beaten lightly
1 red apple, peeled and grated
Peel, deseed and chop pumpkin and boil in water, with frozen peas and corn kernels, until pumpkin is soft - this will take 10 - 15 mins.
While this is cooking, add flour to eggs and mix with a fork until smooth.
Drain vegies and take out pumpkin to dry off separately on a plate (takes only about 5 mins for the water to evaporate off - if you don't do this, the mix may end up too wet). Once this is done, mash pumpkin well. Add peas and corn, grated apple and batter mix to the mashed pumpkin.
Mix until all ingredients are well combined.
Spray a fry pan with olive oil and then heat over a moderate low heat (you have to be careful not to have the heat too high or the fritters burn).
Add batter to the warmed frypan (approx tablespoon of mix at a time) and cook until done. The uncooked side will start to show sunken bubbles when the fritter is ready to flip. (takes 2 - 3 minutes each side).
Tasty warm or cold. Can use different vegies or add cooked garlic and onion for more flavour. Nice plain or spread with cream cheese.
